Easy Lemon Pie {Vegan/Paleo}

This PIE. This fluffy cream pie! I am in LOVE with this lemon pie. Out of the dozens of healthy desserts I’ve made in the past two years, this is easily one of my absolute FAVs. I can’t wait to share the recipe. It’s so simple and quick!

Lately, I have been all about EASY. When I don’t have hours to spend in the kitchen, but I still need a yummy treat, this is the answer.

Just 6 simple ingredients and 6 minutes to make it! No baking, no food processor, nothing fancy. The best part? You don’t have to put it in the fridge or freezer for HOURS to let it set (like most raw vegan desserts). Enjoy it right away!

The caveat — you need coconut cream from a can of coconut milk that has been chilled overnight (but sometimes a few hours is all you need… Actually my house is cold enough that the cream is usually already separated, but I always try to keep a can (or two!) of coconut milk in my fridge at all times so I’m prepared for when the craving strikes 😉 )
Lemon Pie Pretty PiesA delicious lemon cream pie made entirely from healthy whole foods? Yep!! It sounds too good to be true, right? And only 3 Tbs of sweetener in the entire recipe! That’s all it needs. (Another reason I love coconut! It’s already mildly sweet on its own.)

It’s mostly made of variations of coconut with some maple & lemon. Yum! (ps does anyone else buy coconut oil in these HUGE containers? lol I use a LOT of coconut oil. Love it! Delish and it’s super healthy.)

This pie has a soft, cake-like crumb crust and fresh lemony cream piled on top. I can’t get enough. (I may have a whipped cream addiction.) The fluffy cream is light as a feather, melt in your mouth. Perfect for an after-dinner treat.

These mini tart pans I used make the perfect size pie for sharing, but you may want to keep the whole pie for yourself. No judgement here. I could totally polish off the entire recipe.

But in case you want to share, it’s something almost everyone can enjoy! No gluten, dairy, grains, eggs or refined sugar. It’s vegan, Paleo and nut free, so it’s allergy friendly. If you make this recipe, I’d love to hear what you think!

Crumb Crust
  • 1/4 cup coconut flour
  • 1/4 cup water
  • 1 Tbs maple syrup
  • 1 Tbs coconut oil melted
Lemon Cream
  • 1 can coconut milk refrigerated overnight
  • 2 Tbs maple syrup
  • 2 Tbs coconut oil
  • lemon zest from 1 lemon
  • 1 Tbs lemon juice
  • 1 tsp vanilla extract

  • 1/4 cup coconut flour

Instructions
To make the crust, stir together all ingredients in a small bowl.
  1. Stir together all ingredients in a small bowl.
  2. Divide into 2 mini tart pans or small pie dish lined with parchment.
To make the lemon cream:
  1. Scoop out solid cream into a mixing bowl.
  2. Add in syrup, zest, juice and extract and whip with hand mixer.
  3. Pour in melted coconut oil last and whip until fluffy.
  4. Spread on top of crust.
  5. Chill or enjoy right away!
Recipe Notes

This recipe makes two tiny pies or one small and serves 4. You can easily double the recipe for a standard size pie.

I ONLY recommend Thai Kitchen brand coconut milk. There are so many others I've tried in the past that DO NOT work. This brand is perfect 99% of the time.

Keep refrigerated. Should last about a week.
