When life gives you lemons…

You make lemon desserts, of course! Somehow I ended up with tons of lemons, so new lemon recipe it is!

Btw, if you happen to have lemons you need to use up, zest them! Then freeze the zest in a ziplock bag if you’re not using it right away. I like to add lemon zest to everything! Muffins, pancakes, pesto, and of course, these lemon bites! OMG yum!

Fresh lemon zest adds TONS of lemon flavor to these little pieces of heaven. I can never stop at just one! But that’s fine with me, because they’re LOW CARB. Yep, no sugar of any kind.

Zest. Stir. Devour.

These are crazy simple to make. And you don’t need a food processor or mixer. Just a good old fashioned spoon, ha. Stir together the handful of ingredients (almond butter, lemon, coconut flour & sweetener). Then roll the balls in coconut shreds or more coconut flour (both of which remind me of a crispy sugar coating.. but sugar-free! And oh so good.)

If you’re not low carb, go ahead and roll them in raw sugar (because Yum.)

Protein balls, bliss balls, power bites, energy bites, dough balls, truffles… So many names for these little guys! But yes, they are full of protein and BLISS, haha. Whatever you call them, they’re delicious!

Chewy, lemony deliciousness. Love! So simple. So healthy. So dang good.

Ingredients
  • 2/3 cup almond butter or cashew butter
  • 1/3 cup coconut flour
  • Zest of 2 small lemons
  • 2 Tbs lemon juice
  • 25 drops Sweetleaf vanilla creme stevia see notes
  • 1 tsp vanilla extract
  • Dash of salt
  • 3 Tbs Coconut flakes and/or coconut flour for rolling

  • 1/3 cup coconut flour
  • Zest of 2 small lemons
  • 2 Tbs lemon juice
  • 25 drops Sweetleaf vanilla creme stevia see notes
  • 1 tsp vanilla extract
  • Dash of salt
  • 3 Tbs Coconut flakes and/or coconut flour for rolling

Instructions
  1. Stir together all ingredients (except coconut flakes) in a medium bowl.
  2. Taste and adjust for sweetness & lemon flavor, adding more sweetener or zest if needed. If your dough is too wet, add a little more coconut flour. If it's too dry, add an extra splash of lemon juice or water.
  3. Scoop balls onto a parchment lined plate using a small cookie scoop, teaspoon or tablespoon. Use your hands to roll the dough into a ball.
  4. Roll each ball in coconut flakes or coconut flour. Or just leave them as-is!
  5. Freeze or refrigerate until cold. Enjoy!
Recipe Notes


I used SweetLeaf stevia drops, but you can use whichever sweetener you like best. However, you may need to add more coconut flour if using liquid (maple/honey) or less if using granulated/powdered sweetener. I would start with 1 Tbs maple syrup and add 1 Tbs extra coconut flour. Taste and see if it's sweet enough. Adjust to your liking πŸ™‚

Keep these in the refrigerator (or freezer).

      I got 1g net carbs (based on 18 bites) and 3g net based on 12. It depends on how big you make them.
