I love all things MINI… especially mini food.

And mini cheesecakes? I’m sold!

These have no dairy and no eggs, but they’re still as rich and velvety as the real deal.Mini Strawberry Vegan Cheesecakes

Whats the secret ingredient? CASHEWS!

These humble little nuts transform into the loveliest cream after you soak them overnight and blend them up.

They are magical.

Vegan or not, these cheesecakes are delish. And super easy to whip up.

I made these mini cheesecakes for my daughter’s birthday party and they were a hit! Let me know if you try them!

Vegan Strawberry Cheesecakes
Individual cheesecakes are perfect for parties (or to keep yourself from eating the whole pie! 🙂 )
Mini Strawberry Vegan Cheesecakes
Servings
Ingredients
  • 1 cup almonds
  • 3/4 cup dates
  • 1/2 tsp vanilla bean powder
  • Dash of pink salt
  • For the filling
  • 1 1/2 cups soaked cashews
  • 1 cup strawberries fresh, diced
  • 3 Tbs lime juice or lemon juice
  • 1/3 cup coconut oil melted and cooled
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup or honey, to taste
  • pinch of Pink salt
  • 1/2 cup strawberry slices for garnish

  • 1 cup almonds

  • 1 cup strawberries fresh, diced

Mini Strawberry Vegan Cheesecakes
Instructions
  1. Pulse crust ingredients in a food processor until sticky crumbles form.
  2. Press into cupcake liners or silicone cupcake mold.( A small measuring cup works great)
  3. Rinse food process or and add cashews. Blend, scraping down sides as needed.
  4. Add remaining filling ingredients and blend until smooth.
  5. Stream in melted coconut oil.
  6. Taste & adjust.
  7. Pour on top of mini crusts
  8. Freeze a few hours to set.
