Ingredients
Crust:
  • 1 cup almonds
  • 3/4 cup medjool dates
  • 1/4 tsp vanilla bean powder
  • Dash of pink salt
  • Splash of water if dry
Filling:
  • 3 ripe avocados
  • 1/3 cup raw cacao powder 4-6 Tbs, to taste
  • 1/4 cup melted coconut oil
  • 1/4 cup pure maple syrup or honey, to taste
  • 1 Tbs coconut sugar optional
  • 1 Tbs vanilla extract
  • 1/2 tsp mint extract
  • 1/4 tsp vanilla powder
  • pinch pink salt

Instructions
To make the crust:
  1. Pulse ingredients in a food processor until sticky crumbles form (Careful not to over process).
  2. Press into parchment-lined 7" springform pan.
To make the filling:
  1. Scoop out avocados into food processor and blend with maple syrup.
  2. Add in remaining ingredients and blend well.
  3. Taste & adjust. (more cacao, sweetener or mint, if you like)
  4. Spread over crust & freeze 2 hours until solid, then transfer to fridge. Enjoy!!
