No-Bake Snickerdoodle Pops

I am so in love with these Snickerdoodle Pops! SO. good. Addictively delicious! And so easy to make! In five minutes or less, you can be enjoying these amazing little pops.


NO baking involved. Just blend the ingredients together in a food processor and roll in cinnamon sugar. (And try not to eat the entire batch! lol) They are thick and chewy with a crisp cinnamon sugar coating just like a snickerdoodle cookie. Mmmmm.

They’re made with simple, whole foods like cashews, dates, coconut and cinnamon, so you can enjoy them guilt-free! Since they’re made with healthy fats, protein and fiber, they won’t spike your blood sugar. Yay for whole food desserts! 

These are a pretty and festive enough for a holiday party, but simple and easy enough for an afternoon snack. I made these for my husband to take to his office Christmas party potluck and he said they were a HIT! I’m definitely going to have to make more. Hope you ENJOY! 🙂

No-Bake Snickerdoodle Pops
The irresistible combo of cinnamon and sugar in a bite size pop!
Prep Time 5 minutes

Ingredients
  • 1 1/4 cup cashews
  • 1 cup dates
  • 1/2 cup unsweetened shredded coconut
  • 1 1/2 Tbs coconut oil
  • 1/2 tsp vanilla
  • 3/4 tsp cinnamon
  • Dash of salt
For Rolling:
  • 1/4 cup coconut sugar or cane sugar
  • 1/2 tsp cinnamon

For Rolling:
  • 1/4 cup coconut sugar or cane sugar
  • 1/2 tsp cinnamon
Instructions
  1. In a food processor, pulse all ingredients together (except the cinnamon sugar) until a sticky dough forms.
  2. Scoop out 1 Tbs at a time and roll into a ball with your hands. (Don't worry if the dough seems oily. This is necessary for the coating to stick)
  3. In a small bowl, mix cinnamon and sugar together. Drop each ball in and turn to coat.
  4. Enjoy!
Recipe Notes

Store in an airtight container. Should be fine at room temp. Refrigeration will cause them to harden slightly, but setting them out at room temp will return them to normal.

    Snickerdoodles are my #1 cookie, always and forever. I make delish raw cinnamon sugar donut holes that are similar to these, but need to try your version soon
