No-Bake Snickerdoodle Pops
The irresistible combo of cinnamon and sugar in a bite size pop!

  • 1 1/4cup cashews
  • 1cup dates
  • 1/2cup unsweetened shredded coconut
  • 1 1/2Tbs coconut oil
  • 1/2tsp vanilla
  • 3/4tsp cinnamon
  • Dash of salt
For Rolling:
  • 1/4cup coconut sugar or cane sugar
  • 1/2tsp cinnamon
  1. In a food processor, pulse all ingredients together (except the cinnamon sugar) until a sticky dough forms.
  2. Scoop out 1 Tbs at a time and roll into a ball with your hands. (Don’t worry if the dough seems oily. This is necessary for the coating to stick)
  3. In a small bowl, mix cinnamon and sugar together. Drop each ball in and turn to coat.
  4. Enjoy!
Recipe Notes

Store in an airtight container. Should be fine at room temp. Refrigeration will cause them to harden slightly, but setting them out at room temp will return them to normal.
