“Sprinkles make me happy”

I remember repeating these words over and over throughout the years. One of my favorite pastimes when I was in jr. high was a special trip with my mom to TCBY. I would always get the SPRINKLE Parfait. And it always brought a smile to my face. Sprinkles are colorful, bright, fun and SPECIAL. They turn something plain and ordinary into something festive and delightful. They bring me great JOY and I hope they do for you, too! πŸ˜‰

Spreading the joy: I wish I had a picture of my kids’ faces when I showed them this sprinkle cake. Their eyes lit up in wonder. “SPRINKLES!! Yay!!” The sprinkles=happiness gene has been successfully passed down. Success, haha.

Artificial Food coloring? Nope.

I was so tempted to add “conventional” sprinkles to my cake batter pie, but I KNEW there had to be something NATURAL and healthy that could still be pretty and fun.

So I racked my brain, thinking about how to accomplish the color and BAM.., Fruit? The Zest! It adds vibrant natural color, delicious flavor, and it’s SO easy and inexpensive! For orange, yellow and green, I zested a mandarin orange, 2 lemons and a lime and mixed in some coconut shreds. So you don’t have to spend hours crafting sprinkles by hand, lol! These literally take 5 minutes.

Want more colors? The red color is freeze-dried raspberries that I blended! If you want purple, use freeze-dried blueberries (like I did in this purple frosting). Freeze dried fruit can be found at most natural grocery stores, Whole Foods, Sprouts and even Target.

Last but not least, at the end of the rainbow is chia seeds, haha. (Hey, I got creative I used what I had on hand.) But if you want a true blue, you can use some blue spirulina powder mixed with coconut. You’ll win the award for most fancy. But don’t discount the humble chia seeds. What’s the secret to cake batter flavor?

If you’ve been following me on Insta, you’ve already been in on my little secret. Ok, I’ll fill you in, too πŸ˜‰ It’s cashew butter and (my new FAVORITE THING EVER)Β Mexican vanilla! It has such an incredible flavor and aroma that makes me feel like I’m in a bakery filled with cupcakes!

I discovered that quality vanilla makes a BIG difference. I’ve tried about a dozen different kinds, and this is by far the greatest. I plan to buy this for the rest of my life, lol. So to the makers of this product, PLEASE don’t discontinue it.

Cake Batter Pie with Homemade Rainbow Sprinkles {Low-Carb, Paleo, Vegan}

A creamy cake-batter flavored pie adorned with 100% natural COLORFUL sprinkles. Joy on a platter =D

Ingredients

Crust:

Batter:

  • 2/3 cup cashew butter - I used homemade
  • 1 can coconut milk
  • 2 Tbs coconut water
  • 2 Tbs coconut oil
  • 35 drops stevia
  • 2 tsp Mexican vanilla
  • Pinch of Himalayan pink salt

Rainbow Sprinkles:

  • 3 Tbs zest - lemon, lime, orange
  • 3-4 Tbs finely shredded coconut
  • 2 Tbs chia seeds
  • 2 Tbs freeze dried fruit - raspberries, strawberries

Instructions

To make the crust:

  • Pulse together all ingredients in a food processor until sticky and finely ground.
  • Press into a 7" springform pan lined with parchment.

To make the batter:

  • Refrigerate a can of coconut milk overnight. Scoop out the solid cream into a mixing bowl and whip until light and fluffy.
  • Add the remaining ingredients except the coconut oil and mix again.
  • Melt the coconut oil and stir it in last. Taste and adjust for sweetness.
  • Pour the batter over the crust. Cover with foil and freeze for about 2-3 hours until set.

To make the sprinkles:

  • Zest your choice of fruit and mix each zest with 1-2 Tbs coconut shreds. I used 1 mandarin, 2 lemons and 1 lime. For the red sprinkles I used freeze dried raspberries. Decorate your pie and Enjoy!

Products I used:
Tip: for best results, I always recommend Thai Kitchen brand coconut milk. Other brands often fail.
I made homemade cashew butter by blending 1 1/2 cups of raw cashews in my food processor for about 10 minutes. Super easy.
To store: Keep refrigerated for one week or frozen for 1 month. Keep tightly wrapped. Sprinkles may be stored separately to keep them firm.

    I made this pie but made some alterations. (The more recipes I try off this web site the more adventurous I get!) I made the pie the normal way but instead of the healthy sprinkles I added a layer of the freezer caramel (another AMAZING recipe!) over the top. It was delicious! Some days I accidentally let my slice stay out of the fridge too long and it didn’t stay firm so I just stirred it all around and enjoyed it that way. I even thought it would have made a good strawberry dip at that point. Very very yum! I need to go decide what to make next now!
