With the abundance of fresh apples at the market and my recent discovery AMAZING dairy-free caramel, I had to recreate the CLASSIC combination of apples & caramel using whole foods.

There’s something so special about caramel apples. They were a rare treat growing up.

Beautifully dipped in a glistening coat of caramel. Decorated with all kinds of fancy garnishes like chopped nuts, chocolate drizzle and sprinkles. Such a delight!

But also so tricky to eat! (I still don’t know the proper way to eat one without getting caramel all over my face, haha!)

Hello, Dairy-Free Caramel!

Crisp, tart Granny Smith apples are a new favorite of mine. Just the right about of sweetness to pair with this buttery, sweet caramel sauce.

And this gooey, drippy thick caramel! Omg, melt in your mouth good!

I get giddy when I see tiny pies, lol! They’re so cute! =D

But they’re also perfect for serving. The individual portions make it easier (and more special!). Everyone gets their OWN little pie!

Caramel Apple Tarts {Paleo & Vegan}

Individual pies with a buttery, grain-free crust smothered in smooth caramel, loaded with crisp green apples.

Ingredients

Crust

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil
  • 1 Tbs maple syrup
  • 1 Tbs cashew butter
  • Pinch of pink salt

Dairy-Free Caramel

  • 1 13.7oz can coconut milk ~3/4 coconut cream
  • 2 Tbs pure maple syrup
  • Pinch of pink salt
  • 1/2 tsp pure vanilla extract
  • 2 Tbs cashew butter

For the filling:

  • 3 Tbs cashew butter
  • 2 Granny Smith apples thinly sliced

Instructions

To make the caramel:

  • {Refrigerate a can of coconut milk for a minimum of 4 hours or overnight} Scoop out the solid white cream into a saucepan over medium-high heat. Stir in maple syrup and salt. Whisk and bring to a boil.
  • Reduce heat to a simmer and cook for about 30 minutes, stirring occasionally, until caramelized.
  • Remove from heat and whisk in vanilla and cashew butter. Set aside to cool (bring to room temp) and thicken.

To make the crust:

  • Preheat oven to 400 degrees.
  • Add almond flour and salt to a medium bowl.
  • In a small bowl, melt together all the wet ingredients. Pour over the almond flour and mix well.
  • Scoop a heaping 1/3 cup of dough into each of 4 tart pans. Press firmly with a flat measuring cup.
  • Bake for about 12 minutes, until lightly golden. Set aside to cool before adding filling.

To assemble:

  • Spread a spoonful of cashew butter on each cooled crust.
  • Drizzle 1 Tbs of caramel on top.
  • Add a layer of apple slices and one more Tbs of caramel. (Optional, chill for a firm caramel) ENJOY!

What I used:
This recipe makes 4 generous portions. You can double the recipe for a larger crowd or to fill a standard size pie/tart.
If you prefer a firm, solid caramel, refrigerate for about 1-2 hours before serving.
If you love soft, cooked apples, you can bake these tarts after the filling is added, for about 20 minutes covered with foil. My hubby LOVED it that way.
Serve right away or refrigerate for serving later. (do not freeze). Bring to room temp to serve.

      I’m sorry, but I don’t have much experience with baking with eggs, since my recipes are egg-free. But I bet Pinterest has a lot of great recipes. Just search “paleo apple cake” 🙂 Hope that helps!
