It’s time once again for a yummy fall treat.: Pumpkin Spice Energy Bites! So much flavor packed into these sweet little bites of pumpkin bliss. Are you ready to satisfy your pumpkin spice cravings?

I LOVE the fact that these are SO easy, SO quick, SO simple.

Literally just pulse the ingredients in a food processor (I love this one!)

  1. Walnuts – sooo good for you! Your brain, heart, gut – your whole body!
  2. Pumpkin – is it a veggie? Idk but it’s a plant and everyone needs more plants in their diet! ha
  3. Dates – soft, chewy, caramel-esque dried fruit full of potassium & fiber
  4. Spices – a heavenly medley of cinnamon, nutmeg, ginger, allspice and cloves. The classic FALL flavor!
  5. Salt – I use pink Himalayan salt for all the wonderful minerals which make it taste friggin AMAZING.

I’ve come to terms with the fact that I *Need* to eat at least every 2-3 hours. Yep. I just cannot do big, heavy meals. My body doesn’t like that. That’s why I love making little bites, bark, bombs, all. the. things that taste like dessert, but they’re totally acceptable any time of the day. 😉
Not to mention the fact that post-school, my kids practically DIE of hunger as soon as they walk in the door, lol! Any other mamas feel me? I feel like a non-stop snack maker come 3:30 pm. These bites are the perfect kid-friendly, healthy snack. But I kinda don’t wanna share these!! haha! #momlife

Pumpkin Spice Energy Bites

Pumpkin spice goodness in a bite sized treat! 5 ingredients & less than 5 minutes!

  • 1 1/3 cup walnuts - or pecans
  • 6 medjool dates - (2/3 cup) *see notes for low carb
  • 1/4 cup pumpkin puree
  • 1 1/4 tsp pumpkin spice - to taste *see notes for homemade spice mix
  • Pinch of salt


  • Pulse together walnuts and dates in a food processor a few times to break down into sticky crumbles.
  • Add pumpkin, spice and salt and pulse again to combine into a slightly chunky dough.
  • Taste and adjust to taste - more spice, salt, or a dash of dry sweetener, such as coconut sugar if you like.
  • Use a cookie scoop to form balls. Chill or freeze for at least 30 minutes to firm up for best consistency. ENJOY! 🙂

Pumpkin Spice Recipe. Combine the following in a small jar & shake to mix. Can easily be doubled.
  • 3 Tbs cinnamon
  • 2 tsp ginger
  • 2 tsp nutmeg
  • 1-1/2 tsp allspice
  • 1-1/2 tsp cloves
To store: Keep refrigerated for about 10 days, or frozen up to 2 months, in an airtight container. ps they're delicious straight from the freezer!
To make these low carb: sub dates with 1/3 cup almond butter + a pinch of pure stevia powder or monk fruit extract, to taste + almond flour or coconut flour, to achieve the right consistency * I have not tried that in this particular recipe *
