(Prep) Chop a ripe pineapple into small chunks and place on a tray lined with parchment and freeze until solid.
Place ½ cup pineapple chunks, coconut milk and monkfruit drops, extract, ice and water in a small blender (add an extra Tbs water if you prefer a thinner consistency)
Blend smooth.
Taste and adjust for sweetness, if needed.
Enjoy immediately :)
Notes
If your coconut milk is solid, place the can in a bowl of warm water for a few minutes and shake to mix.To reduce the carbs use ¼ cup pineapple + 2 more ice cubes and 2-3 additional drops of monkfruit.Sweetener swap: You can use any sweetener you like, such as 1 teaspoon monkfruit granules, coconut sugar, stevia drops, or a splash of maple syrup or honey.To make a Frozen Piña Colada: use white rum instead of water :)
