Piña Colada Smoothie
A tropical frozen treat made with simple, wholesome ingredients and no added sugar!

Servings: 1 smoothie
- 1/2 cup frozen pineapple chunks
- 1/3 cup canned coconut milk
- 6 drops monkfruit or preferred sweetener (see notes)
- 2 1/2 Tbs water
- 1 ice cube
- 1/4 tsp coconut extract
(Prep) Chop a ripe pineapple into small chunks and place on a tray lined with parchment and freeze until solid.
Place 1/2 cup pineapple chunks, coconut milk and monkfruit drops, extract, ice and water in a small blender (add an extra Tbs water if you prefer a thinner consistency)
Taste and adjust for sweetness, if needed.
Enjoy immediately :)
If your coconut milk is solid, place the can in a bowl of warm water for a few minutes and shake to mix.
To reduce the carbs use 1/4 cup pineapple + 2 more ice cubes and 2-3 additional drops of monkfruit.
Sweetener swap: You can use any sweetener you like, such as 1 tsp monkfruit granules, coconut sugar, stevia drops, or a splash of maple syrup or honey.
To make a Frozen Piña Colada: use white rum instead of water :)
