Toast pecans in a dry skillet for 5-8 minutes over medium heat, stirring occasionally, until fragrant and crisp.
Blend ⅓ cup monkfruit into a powder (about 10 seconds) using a small blender. (tip: make some pb balls with the leftover powder!)
To make the bites:
Add pecans and remaining ingredients (except water) in a food processor and pulse until finely ground.
Add water at the end and pulse again. Mixture should stick together when squeezed between your fingers. If too crumbly, add another ½ Tbs water or coconut oil (melted)
Use a cookie scoop to make balls (pack the dough very firmly so they hold together). Smooth the bites with your hands by carefully squeezing and forming, if you like.
Freeze for 5-10 minutes to set. ENJOY :)
