Pecan Sandy Bites (Keto, Paleo, Vegan)

Buttery PECAN Sandies flavor in a bite size cookie ball (without the gluten dairy or sugar!) No baking needed!

  • 1 1/2 cup pecans
  • 3 Tbs desiccated coconut unsweetened
  • 1 1/2 Tbs buttery flavor coconut oil or refined coconut oil
  • 1 1/2 Tbs Lakanto monkfruit powdered (or powdered coconut sugar for non keto)
  • Pinch of pink salt
  • 1 Tbs water


Prep your ingredients:

  • Toast pecans in a dry skillet for 5-8 minutes over medium heat, stirring occasionally, until fragrant and crisp.
  • Blend 1/3 cup monkfruit into a powder (about 10 seconds) using a small blender. (tip: make some pb balls with the leftover powder!)

To make the bites:

  • Add pecans and remaining ingredients (except water) in a food processor and pulse until finely ground.

  • Add water at the end and pulse again. Mixture should stick together when squeezed between your fingers. If too crumbly, add another 1/2 Tbs water or coconut oil (melted)

  • Use a cookie scoop to make balls (pack the dough very firmly so they hold together). Smooth the bites with your hands by carefully squeezing and forming, if you like.
  • Freeze for 5-10 minutes to set. ENJOY :)
