To make homemade chocolate coating: Mix together
2 Tbs melted coconut oil
1 1/2 Tbs MCT oil or canned coconut milk
1 1/2 Tbs cacao
Pinch of pure stevia powder or powdered monkfruit
1/2 tsp vanilla
Dash of salt
Nutrition Info: For one serving of pb ice cream: 229 cal, 20g fat, 5g carbs - 2g fiber = 3g net carbs, 5g protein (based on 5 servings, approximately 1/2 cup)
For 1 Reese's Cup: 119 cal, 11g fat, 4g carbs - 2g fiber = 2g net carbs, 3g protein
To store: Keep frozen & wrapped in cling wrap to prevent freezer burn. Should be good at least 1-2 months in the freezer. But the texture is best the same day it's freshly churned.
Sweetener swap: You may use any DRY sweetener you like -- the equivalent of 1/4 cup of powdered sugar, such as powdered monkfruit, erythitol or coconut sugar (use a blender to make homemade powdered sweetener). Taste and adjust as needed.
Liquid sweeteners are not recommended, as they usually make the mixture too icy.
