Blend an entire bag of freeze dried strawberries into a powder using a small blender or food processor (takes about 20 seconds)
Measure a scant ⅓ cup strawberry powder and add to a medium mixing bowl (reserving the leftover powder for rolling)
Add remaining ingredients to the bowl and mix well.
Taste and adjust if needed (more lime, salt, rum or sweetener) If dough is too wet, mix in a teaspoon of coconut flour at a time.
Use a cookie scoop to make balls. Roll smooth with your hands. Freeze for about 15 minutes.
Roll each ball lightly in coconut flour and then in strawberry powder. Sprinkle finely grated zest on top, if you like.
