Ingredients
2cupsstrawberries
1 ½Tbsmonkfruitor preferred dry sweetener, to taste
Zest of one lime
Instructions
Hull and chop strawberries. Measure 2 cups. Add to blender with monkfruit sweetener.
Zest 1 lime directly into the blender (I used a microplane)
Blend smooth. Taste and adjust (make it a little extra sweet)
Pour into popsicle molds. Add sticks and freeze until solid (about 2 hours)
Run the molds under warm water for easy popsicle removal. Enjoy!
Notes
To store: Keep frozen for 1-2 months.Sweetener Swap: any dry sweetener that measures 1:1 with sugar, such as coconut sugar or erythritol. Other options for low-carb: stevia or monkfruit drops, or stevia or monkfruit concentrate.For an extra boost of lime: add a few drops of lime essential oil!
