Combine nuts and dates in a food processor and pulse until sticky crumbles form. Add in salt, and extracts and pulse until a loose ball of dough forms. Add a splash of water if it needs help blending. (the longer your blend, the smoother they get, but I like mine to keep a little texture)
Use a small cookie scoop or 1 Tbs measuring spoon to scoop out balls. Roll smooth in your hands. (Wet your hands if it's too sticky)
Optional: roll in a small bowl of almond flour.
Chill or freeze for a few minutes to firm up, if desired, Enjoy!

What I used:Dry Roasted Unsalted Almonds from ALDI.Medjool Dates from ALDI. I found them on sale for $3-4/lb so I stocked up!To store: keep in an airtight container at room temp for about 10 days. Refrigerate or freeze for longer storage.
