Stir together all ingredients in a mixing bowl. Mix well.
Adjust if needed -- If too dry, add a splash of orange juice or a drizzle of avocado oil. If too wet, add a sprinkle of coconut flour. Sweeten to taste.
Make balls with a small cookie scoop. Use the palms of your hands to squeeze them smooth and into shape.
Lightly roll each ball in a small bowl of coconut flour (about 1-2 Tbs). Optional - freeze or chill for 10 minutes to firm up, if desired. ENJOY :)

What I used: these stevia dropscoconut flour, microplane and cookie scoopTo make homemade almond butter, blend 1 ½ cups dry roasted almonds in a food processor for about 5 minutes until liquefied.Store tightly covered in the refrigerator for up to 10 days or frozen for 4-6 weeks. (They're great frozen, too!)
