3Tbs Coconut flakes and/or coconut flourfor rolling
Instructions
Stir together all ingredients (except coconut flakes) in a medium bowl.
Taste and adjust for sweetness & lemon flavor, adding more sweetener or zest if needed. If your dough is too wet, add a little more coconut flour. If it's too dry, add an extra splash of lemon juice or water.
Scoop balls onto a parchment lined plate using a small cookie scoop, teaspoon or tablespoon. Use your hands to roll the dough into a ball.
Roll each ball in coconut flakes or coconut flour. Or just leave them as-is!
Freeze or refrigerate until cold. Enjoy!
Notes
I used SweetLeaf stevia drops, but you can use whichever sweetener you like best. However, you may need to add more coconut flour if using liquid (maple/honey) or less if using granulated/powdered sweetener. I would start with 1 Tbs maple syrup and add 1 Tbs extra coconut flour. Taste and see if it's sweet enough. Adjust to your liking :)To store: Keep refrigerated (or freezer) for about 10 days (or 2 months frozen in an airtight container).
