In a food processor, pulse all ingredients together (except the cinnamon sugar) until a sticky dough forms.
Scoop out 1 Tbs at a time and roll into a ball with your hands. (Don't worry if the dough seems oily. This is necessary for the coating to stick)
In a small bowl, mix cinnamon and sugar together. Drop each ball in and turn to coat.

Notes
Store in an airtight container. Should be fine at room temperature for about 5 days.. Refrigeration will cause them to harden slightly, but setting them out at room temp will return them to normal.
