3Tbs chia seedscoconut, or cacao for rolling (optional)
Instructions
Add dates in food processor to break them up, then add walnuts and pulse again. (It doesn't take long!)
Add cacao, vanilla, and salt and pulse until a loose dough forms. Add a splash of water if it seems too dry.
Use a cookie scoop to make balls.
Roll in chia seeds, desiccated coconut, or cacao if you like.

Notes
Store in an air-tight container in the refrigerator. Should last at least a week.You only need to pulse the ingredients for a few seconds-til they just come together. If you over-process, it will become like chocolate walnut butter! Good, but a much softer, gooey-er texture. If that happens, you can add in some more walnuts, if you want to try to firm it back up.Other nuts would probably work in place of walnuts, but you may have to blend them before you add the dates. You could try cashews or macadamia nuts.
