Lemon Chill 

Refreshing frosty lemon goodness-- without the sugar!

Ingredients

  • 5 ice cubes
  • Zest of 1 lemon
  • 1/3 cup water
  • Juice of 1/2 a lemon 2 Tbs
  • 1 1/2 Tbs monkfruit granules
  • 5-10 drops monkfruit

Instructions

  • Add all ingredients to a small blender cup (zest directly into the cup using a microplane to make it super easy!)
  • Blend smooth. Taste and adjust with a few more drops of monkfruit, if needed.
  • Immediately transfer mixture to a small bowl (or 2) and freeze until firm throughout, about 30-45 minutes.
  • Enjoy!

Notes

Note:  Melts if left sitting out for more than a few minutes.
Also, will freeze solid if left in the freezer too long. If frozen solid, thaw in the refrigerator until it's the consistency you like.
This recipe can easily be doubled!
