No-Churn Piña Colada Soft Serve 

Pina Colada deliciousness in a soft creamy no-churn ice cream. So simple to make with just 4 ingredients! (Virgin & Spiked recipes! No dairy or sugar!)

Ingredients

Piña Colada Soft Serve

  • 3 cups ripe pineapple chunks
  • 1 13.7 oz can coconut milk solid cream only (3/4 cup)
  • 1/4 cup white rum
  • 1 tsp coconut extract

Virgin Piña Colada Soft Serve

  • 3 cups ripe pineapple chunks
  • 1 13.7 oz can coconut milk shaken
  • 1 tsp coconut extract

Instructions

To make the spiked soft serve:

  • Chop one ripe pineapple into chunks. Place chunks on a parchment lined baking sheet and freeze for about 2 hours until solid.
  • Blend frozen pineapple in a food processor until ground into tiny bits.
  • Add coconut cream, rum and coconut extract and blend smooth.

  • Transfer to a shallow dish and freeze 1 hour to firm up to soft ice cream texture.

To make virgin soft serve:

  • Chop one ripe pineapple into chunks. Place chunks on a parchment lined baking sheet and freeze for about 2 hours until solid.
  • Blend frozen pineapple in a food processor until ground into tiny bits.
  • Add coconut milk and coconut extract and blend smooth (about 30 seconds)
  • Scoop into bowls quickly and enjoy immediately (melts fast!)

Pineapple - be sure to use a RIPE and sweet pineapple, otherwise you may need to add some sweetener (maybe 1-2 Tbs coconut sugar or 15 drops of stevia)
Servings: This makes about 3-4 servings. If you need to make more than that, I would make it in 2 separate batches, as I'm not sure it would all fit in a food processor.
Storage: This soft serve is meant to be enjoyed as soon as it's ready and not stored, as it may turn too hard in the freezer. However, you may be able to freeze it and blend it again in a food processor to bring it back to a soft serve consistency.
