    Healthy Nutella?!

    Oops, I did it again. I gave another yummy (but sugar-laden) food a HEALTHY MAKEOVER. Did you know the *first* ingredient in Nutella is SUGAR! No wonder people love it.

    And they are tricked into thinking it's a healthier choice by their advertising. Sure it has real hazelnuts and cocoa, but it's got a LOT more than that. Don't get me started on the deceptive practices of the food industry. Makes my blood boil, ha.

    I'm a little obsessed with nutella flavor lately. Did you catch my recipe for "No-tella" Truffles? Omg they're delish. But I couldn't leave out my low-carb/keto friends on the hazelnut fun! You're gonna thank me after you taste this! lol

    I have a feeling that even more hazelnut recipes are in order! Ooooh, I bet a hazelnut PIE CRUST would be delish! Or what about cookies?! So many ideas!

    So many keto BARK recipes!

    Have you tried making low-carb bark yet? It's seriously SO simple and SO delish! (And you'd never guess it's sugar-free!)

    So many of you guys LOVE my Peanut Butter Bark recipe! Did you know I also have a Cinnamon Praline Bark and Chocolate Almond Butter Bark. I LOVE THEM ALL. You've gotta try them. Yes, ALL of them 😉

    But there's something very special about THIS bark: HAZELNUT. Oh my goodness, the hazelnut chocolate flavor is just INCREDIBLE.

    And here's the best news: there's less than ONE CARB per piece!! So go ahead and enjoy a piece or two, friend 😉

    Easy! Just Blend, baby, BLEND

    If you have a food processor or high speed blender, you're in luck! All you do to make this bark is blend some roasted hazelnuts, cacao, coconut oil, & stevia.

    Spread it out on parchment and sprinkle with more hazelnuts. Freeze it, slice it up, and enter hazelnut HEAVEN. This is seriously blissful stuff.

    Where to find hazelnuts

    I found my hazelnuts at Aldi (but they no longer carry them regularly). I have also gotten them at Sprouts. But if your grocery store doesn't carry hazelnuts (which many do not any more), Amazon to the rescue!

    And even BETTER, I just saw that you can buy them pre-roasted, AND blanched (which means NO skins!) This is a major time-saver.

    Now you can skip the entire first step of roasting and removing the skins from your hazelnuts. That's a good 15-20 minutes saved. Hallelujah!

    How to store bark

    Keep this bark stashed in your freezer for any time you need a delicious boost of good-for-you fats & protein in the form of HEALTHY Nutella!

    This is made with coconut oil, so it will melt if left out at room temp.

    Ingredients

    US Customary - Metric
    • 1 ½ cups hazelnuts - divided
    • ⅓ cup coconut oil
    • ¼ cup cacao powder
    • 1 teaspoon vanilla
    • 15 drops Sweet Leaf vanilla creme stevia - or monkfruit drops, to taste. See notes
    • Pinch of pink salt

    Instructions

    • Heat oven to 350 degrees. Roast the hazelnuts on a baking sheet in the oven until golden and fragrant, about 10 minutes. (Optional, rub hazelnuts in a clean towel to remove skins.)
    • Add 1 cup of nuts to a food processor and blend smooth. Scrape down the sides and add remaining ingredients and blend again. Taste and adjust for sweetness.
    • Line a small baking sheet with parchment. Pour mixture on the pan and spread to about ⅛" thickness. Sprinkle with remaining ½ cup hazelnuts.
    • Freeze for 30-45 minutes until solid. Cut into 1"x3" pieces. Enjoy!

    Notes

    To store: MUST be refrigerated, but preferably FROZEN. *Melts at room temp*
    Sweetener options: stevia drops/extract, monkfruit drops/extract, powdered monkfruit/coconut sugar or swerve.

        Should the hazelnuts be blended in hazelnut butter or just grounded hazelnuts?

      I want to make these, but since I’m keeping track of all my numbers I was hoping there was nutritional facts posted with the bark recipe! Would have been simpler, but I can find it myself on each product. Still going to try this recipe!

      Hey! Do you think I can substitute the cacao powder for cocoa powder?
      I do have cacao nibs - maybe I can grind them up and make a powder?! Not sure.
