Easy Cookie Dough Truffles {Paleo/Vegan/Keto}

Ingredients
⅔
cup
cashew butter
¼
cup
coconut flour
(+ 1-2 Tbs more, if needed)

Tbs
pure maple syrup
(or 12 drops of Sweet Leaf Vanilla Creme Stevia)

teaspoon
vanilla
Pinch of Himalayan pink salt

bar of dark chocolate

Instructions
In a medium mixing bowl, stir together all ingredients (except the chocolate and coconut oil.)
If your dough is too wet, add in extra coconut flour. Optional: add in 2-3 Tbs chocolate shavings or chips.
Use a cookie scoop to make balls (½ Tbs to 1 ½ Tbs size) Roll with your hands to smooth them out.
In the microwave or a double boiler, melt 2 oz chocolate and coconut oil. (See notes for homemade chocolate)
Place each ball in the bowl melted chocolate and roll it around to coat.
Use a fork to lift each truffle onto a parchment-lined plate. Drizzle extra chocolate on top if you want it pretty.
Freeze for 20 minutes until firm. ENJOY!
