Easy Cookie Dough Truffles {Paleo/Vegan/Keto}

A sinful dessert made Guilt-FREE out of healthy ingredients!

Servings: 24 truffles


  • 2/3 cup cashew butter
  • 1/4 cup coconut flour (+ 1-2 Tbs more, if needed)
  • 2 Tbs pure maple syrup (or 12 drops of Sweet Leaf Vanilla Creme Stevia)
  • 1 tsp vanilla
  • Pinch of Himalayan pink salt
  • 3 oz bar of dark chocolate (see notes)
  • 2 tsp coconut oil


  • In a medium mixing bowl, stir together all ingredients (except the chocolate and coconut oil.)
  • If your dough is too wet, add in extra coconut flour. Optional: add in 2-3 Tbs chocolate shavings or chips.
  • Use a cookie scoop to make balls (1/2 Tbs to 1 1/2 Tbs size) Roll with your hands to smooth them out.
  • In the microwave or a double boiler, melt 2 oz chocolate and coconut oil. (See notes for homemade chocolate)
  • Place each ball in the bowl melted chocolate and roll it around to coat.
  • Use a fork to lift each truffle onto a parchment-lined plate. Drizzle extra chocolate on top if you want it pretty.
  • Freeze for 20 minutes until firm. ENJOY!


What I used:

I made homemade cashew butter by blending 2 cups of raw cashews in a food processor until smooth, scraping down the sides as needed. You can also use store-bought (just check the labels for added sugar and such)
Keep refrigerated in an air-tight container. Should last 1-2 weeks in the fridge. Can also be frozen (but if you use maple syrup, they will need to thaw a little first)

Make your own chocolate coating! Simply mix together these ingredients in a small bowl:

3 Tbs coconut oil, melted
2 Tbs cacao
1 Tbs cashew milk
8 drops sweet leaf vanilla stevia drops OR 2 tsp maple syrup
1/2 tsp vanilla
Dash of pink salt
