How to Turn Cashews into Cookie Dough
Simply stir in a little sweetener & coconut flour, and you have an EASY, delicious little treat full of FIBER. Yes, fiber. You can even add CHOCOLATE. For this batch, I added just a couple spoonfuls of chocolate shavings. But you can also use chocolate chips, or leave them out. Either way, I LOVE THEM.
Low-Carb Option!
You can make these LOW CARB. Can I get a Hallelujah? lol.
I tested this recipe with both STEVIA and MAPLE SYRUP and they're both equally amazing. So the choice is yours! With simple healthy ingredients (and sugar-free options) these decadent truffles can be enjoyed by many different diets-- vegan, paleo, keto, low-carb, dairy-free, gluten-free, egg-free, and grain-free.
How to Make These NUT-Free
You can also make these nut-free using sunflower butter! (although the flavor will be less cookie-flavored.

Easy Cookie Dough Truffles {Paleo/Vegan/Keto}
Ingredients
- ⅔ cup cashew butter
- ¼ cup coconut flour - (+ 1-2 Tbs more, if needed)
- 2 Tbs pure maple syrup - (or 12 drops of Sweet Leaf Vanilla Creme Stevia)
- 1 teaspoon vanilla
- Pinch of Himalayan pink salt
- 3 oz bar of dark chocolate - (see notes)
- 2 teaspoon coconut oil
Instructions
- In a medium mixing bowl, stir together all ingredients (except the chocolate and coconut oil.)
- If your dough is too wet, add in extra coconut flour. Optional: add in 2-3 Tbs chocolate shavings or chips.
- Use a cookie scoop to make balls (½ Tbs to 1 ½ Tbs size) Roll with your hands to smooth them out.
- In the microwave or a double boiler, melt 2 oz chocolate and coconut oil. (See notes for homemade chocolate)
- Place each ball in the bowl melted chocolate and roll it around to coat.
- Use a fork to lift each truffle onto a parchment-lined plate. Drizzle extra chocolate on top if you want it pretty.
- Freeze for 20 minutes until firm. ENJOY!
Ingredient Recommendations
Raw Cashews from Costco.
Note: I use homemade cashew butter made by blending 2 cups of raw cashews in a food processor until smooth, scraping down the sides as needed. You can also use store-bought (just check the labels for added sugar and such)
To Store:
Keep refrigerated in an air-tight container. Should last 1-2 weeks in the fridge. Can also be frozen (but if you use maple syrup, they will need to thaw a little first)

Either one. They also keep at room temp in an airtight container.

Hey! This recipe looks delish! First of all, I am going to make some truffles for Valentine’s Day for my mom, and I’m trying to figure out which ones I should make. We are dairy free, grain-free, and sugar-free, etc. Do you have a suggestion? Which ones are your fav?
But most importantly, can I use almond butter instead of the cashew butter?

Yes, almond butter works, too. It’s just not as sweet, but you can sweeten to taste. (I would use monkfruit in these now. This recipe was created before I discovered Lakanto 🙂
