    4-Ingredient Fudge (Dairy-Free, Sugar-Free)

    Real-deal fudge taste. None of the butter or sugar! You can have your fudge and eat it too with 4 simple ingredients and 4 minutes 😉 It's keto, paleo and vegan approved!

    Happy Accidents

    If you follow me on Instagram, you may have seen in my stories recently a video with my 5-year-old daughter and I making another batch of my Healthy Reese's.

    We switched it up a little, and discovered something amazing. Something that's a game-changer. Something delicious. On accident!

    And it has to do with two of my favorite things on the planet! Can you guess what they are?

    Hint, it's 2 ingredients in this fudge 🙂 This AMAZING, mind-blowing, chewy chocolatey, rich tasting FUDGE. That I CAN'T BELIEVE is sugar-free.

    Favorite Thing 1: NUT Butters!

    Nut-butters. Which one? All of them lol.

    I love peanut butter, almond butter, and *especially* cashew butter. Drool.

    Yes, they're delicious on their own (I love to just get a spoon of AB and sprinkle it with salt and savor it! yum!)

    But they also have magical powers to transform into delicious treats!

    With the help of my second favorite thing: Lakanto Maple Syrup

    FAVORITE Sugar-Free Sweetener

    This monkfruit-sweetened maple syrup (heart eyes, exclamation points, capital letters, LOVE IT) I love the taste of Lakanto monkfruit!

    I'm SO crazy excited to have maple syrup back in my life since I'm low-carb these days. This stuff is a god-send. It's DELICIOUS.

    And it ALSO possesses magical powers. How? When you mix it with favorite thing #1 (nut-butter) .. this happy accident happened. It sort of thickens into a fudge!

    YEAH. A drippy liquid syrup, plus a drippy creamy nut butter = a firm, solid fudge?? I know you probably think that doesn't make sense, but trust me. IT WORKS.

    It's magical.

    FOUR Magical Ingredients

    I can't get over the magical taste OR the magical recipe! SO SIMPLE, so easy, so QUICK.

    1. nut butter (I used cashew, but almond works, too)
    2. monkfruit maple syrup
    3. cacao powder
    4. salt

    "Is cashew butter OK for low-carb?"

    I get questions on this so I want to be sure to point out, yes cashew butter is ok on a keto diet.

    Just be sure to get the no-added sugar variety. Yes, it's slightly higher in carbs that almond butter, but it's still low enough. The macro comparison actually showed the same net carbs --just ONE per piece!)

    "Can I sub another nut-butter?"

    Yes! Any nut or seed butter you like works perfectly fine 🙂

    Easy to make! JUST MIX

    How to make it? STIR. Flatten. Chill.

    That's IT. No special equipment. Not even a hand mixer.

    Tip: if your cacao powder is lumpy, you can sift it using a fine-mesh strainer. Makes it a little quicker/easier to mix. 🙂

    Dairy-Free Keto

    This recipe makes a small-ish batch, but it still has 25 - 1" pieces. You'll just need a small container to press your fudge into to shape it. I used my kids' metal lunchbox, haha. Whatever works.

    If you need the macros, see below the recipe for the macros for different versions using cashew butter and almond butter. It's roughly 1 to 2 carbs per piece! And it's rich enough that you won't want to eat the whole pan (at least for me anyway haha).

    This chewy delicious fudge would be awesome for the holidays! Rich and indulgent taste, but totally guilt-free. ENJOY! 🙂

    4-Ingredient Fudge (Dairy-Free, Sugar-Free)

    Chewy chocolatey delicious fudge that's unbelievably sugar/dairy-free!

    Ingredients

    US Customary - Metric
    • ⅔ cup natural cashew butter or almond butter
    • 2 ½ Tbs cacao powder
    • 2 Tbs + 2 ½ teaspoon monkfruit maple syrup - or pure maple syrup for non low-carb
    • Pinch of pink salt

    Instructions

    • Stir together all ingredients in a medium mixing bowl. Taste and adjust if needed. 
    • Press evenly into a small (5x5") container lined with parchment. (Cover top with parchment and use a flat measuring cup)
    • Freeze for about 20 minutes to firm up. Slice into 1" squares. Enjoy!

      I was so excited to make this!!! It completely lived up to ALL of my expectations! I couldn’t even wait for it to set before I was eating it like crazy! It is also fiancé approved! Before I pressed my first batch into the container I went ahead and doubled it... because... I knew I was gonna eat it all! Make this now!

      Okay I should have been more “foodie specific” - the texture is what got me. It’s so creamy and smooth just like fudge. The flavor is rich and decadent without being too sweet and no aftertaste at all! (And I ate enough to find out) Emily did it again!
