    Coffee & Cream Pie (Low-Carb/Keto, Paleo, Vegan)

    Tastes like your favorite fresh cup of cold brew coffee with cream and sugar, but in a thick, smooth CREAM PIE on a chewy vanilla cookie crust.

    Don't worry, you don't need an espresso maker (or even a coffee maker)! But you'll have incredible coffee flavor in every luscious bite.

    I don't know WHY I avoided coffee like the plague for 27 YEARS of my life, lol!! I simply can't live without it now. French Press in the morning, cold brew in the afternoon, and Coffee & Cream PIE at night! LOVE IT.

    MADE WITH BUTTER

    No, not that kind of butter. ALMOND butter. And it's definitely the MOST delicious almond butter I have ever tasted.

    Friends, if you can, you've gotta get your hands on some Living Tree Organic Alive Almond Butter.. the taste is SO FRESH, so creamy, and mildly sweet (but there's NO added sugar or oils!) JUST ALMONDS.

    I don't know how they do it! Is this some kind of magic?? But it's so good, I just like to eat it by the spoonful.. with a little sprinkle of pink Himalayan salt.. OMggggg. LOVE.

    Using almond butter makes this pie rich and creamy without needing any dairy, eggs or starches. And no, it doesn't make the pie taste like almonds. Just coffee cream deliciousness. Swoon.

    MY NEW OBSESSION: MONK FRUIT

    Holy moly, you guys. I feel like I'm late to the game, but I just tried monk fruit for the first time... and WOW. I was absolutely blown away by the taste (and lack of *aftertaste*!) It really DOES taste like regular sugar! This is GREAT NEWS for all you stevia haters, haha. AND perfect for anyone who's wanting to decrease their sugar intake.

    If you love coffee flavor, then a staple to have in your pantry is Medaglia D'Oro Instant Espresso Powder 

    I absolutely ADORE coffee flavored desserts, but I don't have an espresso maker, and it just doesn't work to add so much liquid in most recipes (nobody wants an icy pie..)

    So using espresso powder is perfect. And remember, this is NOT coffee GROUNDS. It's *freeze-dried* espresso. You can find instant espresso powder in most major grocery stores, and on Amazon. It's inexpensive and lasts a long time.

    Jaw just dropped AGAIN. I'm so shocked, but so EXCITED this pie has only 2 net carbs per slice! Like WOAH that is amaaaazing! Now I no longer feel bad about all the pie I ate while recipe testing LOL.

    Coffee & Cream Pie (Low-Carb/Keto, Paleo, Vegan)

    Ingredients

    Crust

    • 1 ½ cups almond flour
    • 2 Tbs coconut oil
    • 2 Tbs ground flaxseed + 4 Tbs water
    • ½ teaspoon vanilla
    • â…› teaspoon pink salt
    • Dash of pure monk fruit powder - or pure stevia powder

    Coffee Cream Filling

    • ¾ cup coconut cream
    • ½ cup natural almond butter
    • 1 Tbs vanilla extract
    • 2 teaspoon instant espresso powder - see notes
    • â…› teaspoon pure monk fruit powder - or 1/16 teaspoon pure stevia powder
    • Pinch of salt
    • 2 Tbs coconut oil - melted

    Instructions

    To make the crust:

    • Preheat oven to 375.
    • Stir together flax and water in a small bowl and set aside to thicken.
    • In a medium mixing bowl, stir together remaining ingredients and flax mixture. Mix well with a fork.
    • Press into a 7" springform pan lined with parchment. Poke holes all over dough with a fork.
    • Bake 12-15 min until set in the center and lightly golden. Let cool completely on a wire rack or freeze while you prepare the filing.

    To make the filling:

    • (Use a can of coconut milk that has been refrigerated overnight, or a can of cream only.) Carefully scoop out only the solid white cream (reserving the water for a smoothie). Add cream into a medium mixing bowl and sprinkle on espresso powder to dissolve.
    • Add in all remaining ingredients *Except coconut oil* and whip with a hand mixer until smooth.
    • Taste and adjust for sweetness/coffee flavor.
    • Whisk in melted coconut oil at the end, working quickly so it doesn't clump. (If it does, simply melt the mixture gently in the microwave or stovetop)
    • Pour filling over crust and freeze until solid, 3-4 hours or overnight.
    • Remove from springform and allow to thaw slightly to slice. Garnish with coconut whip (recipe in notes) and refrigerate pie until thawed completely.
    • Optional, dust pie with additional instant espresso powder OR cocoa powder. ENJOY!

    Coconut Whipped Cream
    • ¾ cup coconut cream (from one can of coconut milk refrigerated overnight)
    • 5 drops vanilla monk fruit, dash of monk fruit extract, or 8-10 drops stevia
    • 1 teaspoon vanilla extract
    • To make: whip with a hand mixer until fluffy & smooth, about 30 seconds.
    Macros (without whip): calories 257 Fat 26 g Carbohydrate 5 g Fiber 3 g NET Carbs 2 g Protein 6 g
    To store: Keep refrigerated for about 1 week or frozen (w/out whip) for about 1-2 months, tightly wrapped.
    Sweetener Swap I would try ¼ - ⅓ cup powdered sweetener to taste. You can make powdered sugar by blending sugar in a small blender for 5-10 seconds.

      I was told that monk fruit sweetener cannot withstand baking temperatures ? Is that true ?

        That’s the first I have heard of that. My thought is that it’s unlikely, but I’d have to do research. I have heard the classic monkfruit has a higher melting point than sugar, so it’s more difficult to bake with, but not that it can’t withstand baking.

      I absolutely detest coconut. I know that I can use refined coconut oil because it's tasteless and odorless, but for the coconut cream can I substitute heavy whipping cream 1:1?

        Yes you can. It just needs longer to whip. I use a stand mixer. And typically sweeten with a powdered sweetener. Be sure to taste as you go 🙂
