    60-Second Brownie Bites {Vegan, Paleo}

    YES, you read that right. 60-SECOND Brownie Bites. These only take about a minute to make! In a matter of seconds you can pulse together FIVE simple ingredients in a food processor and then enjoy delicious, chewy, chocolatey goodness. No baking required!

    SO easy. SO healthy. SO good. I could eat this entire batch. In fact, I'm pretty sure I inhaled at least 4 or 5 of these the day I made them.

    These are made with walnuts, dates, cacao, vanilla and salt + whatever you like to roll them in! I used chia seeds and coconut. The extra coating is optional, but really makes a delicious texture with a bit of crunch. PLUS chia seeds add a major boost of nutrition!

    Just blend, scoop, roll in some goodies, if you like, and BAM. Super healthy deliciousness ready to be devoured. (ps. rolling with your hands is totally unnecessary when you have a cookie scoop!     These have a rich, deep, dark flavor. If you're a dark chocolate lover, these are for you! If you want a less intense flavor, add a little less cacao OR use cocoa instead (which has a milder flavor). 60-Second Brownie Bites | PrettyPies.com

    60-Second Brownie Bites {Raw/Vegan/Paleo}

    Servings: 20 brownie bites

    Ingredients

    • 1 cup pitted dates
    • 1 ½ cups walnuts
    • 4-5 Tbs raw cacao powder
    • Pinch of pink salt
    • Splash of vanilla
    • Splash of water - if needed to help blend
    • 3 Tbs chia seeds - coconut, or cacao for rolling (optional)

    Instructions

    • Add dates in food processor to break them up, then add walnuts and pulse again. (It doesn't take long!)
    • Add cacao, vanilla, and salt and pulse until a loose dough forms. Add a splash of water if it seems too dry.
    • Use a cookie scoop to make balls.
    • Roll in chia seeds, desiccated coconut, or cacao if you like.
    • ENJOY!

    Notes

    Store in an air-tight container in the refrigerator. Should last at least a week.
    You only need to pulse the ingredients for a few seconds-til they just come together. If you over-process, it will become like chocolate walnut butter! Good, but a much softer, gooey-er texture. If that happens, you can add in some more walnuts, if you want to try to firm it back up.
    Other nuts would probably work in place of walnuts, but you may have to blend them before you add the dates. You could try cashews or macadamia nuts.

      OOOOOOOOOOOOh .... Me God!!! These are SO delicious! I mean... whoa! I did not use any chia seeds, but rolled the spoonfuls in unsweetened coconut shreds. Additionally, the only thing is I kinda had to keep splashing water in there and the whole process took me about 10 minutes (from when I put the dates in the blender to pulse. It could have been that I used a blender, and not a food processor, but anywhos..... It was definitely worth the time it took & there was no wait time after they were done! 🙂 Thank you!

        So glad you liked them! Yes a blender vs food processor makes a big difference. But I'm glad your blender could handle the nuts & dates! I think mine would've caught fire lol

          Hahaha! Yes. Well, instead of going on a bunch of mani-pedi trips and getting my hair done, I decided to save that money and buy a Blendtec. It usually can handle everything I put in there. But that is very funny! lol!!!
