Toasted pecans with a crispy candy coating! --without the sugar! Perfect for salads, desserts, and snacking! Just 4 simple ingredients. No gluten, dairy, sugar, or oil. (Keto, vegan & Paleo)
Once You Pop...
These pecans have to carry a warning. Listen in. I've gotta make sure you know that these pecans are hard to stop eating. They're so good, so easy to pop in your mouth, that if you don't pay attention, the ENTIRE bowl will be GONE in minutes.
So CRISPY, perfectly sweet, a little salty with a hint of cinnamon. Holy. Moly.
QUICK AND EASY RECIPE
I can't get over how quick and easy these are to make. Years ago I made them in the oven.. and that took a good 20+ minutes (not to mention the time to preheat the oven, etc)
I love 5 minute recipes! Because sometimes you don't have hours to wait for a dessert to set up, ya know?
With these, you just throw everything in a skillet, cook, and then DEVOUR. 🙂
4 INGREDIENTS
- Pecans. Are they the BEST nut ever? Probably!
- Granulated Monkfruit. Yeah, it's a real fruit, but has NO SUGAR :O
- Cinnamon. A little spice makes it soooo nice.
- Pink himalayan salt. Once you go pink, you never go back! I use this one
No, you don't need egg whites to make these have a beautiful crisp glaze! I promise it works.
CRISPITY Crunchity
The crunch is the BEST. That candy coating. LOVE.
I still can't get over how the monkfruit acts JUST LIKE SUGAR. It melts just the same on the stovetop. And TASTES just like sugar, too. SO freaking awesome.
You don't need any special equipment. No special skills. You just need to pay attention, haha.
I speak from experience. If you get distracted while making these.
Careful: they can go from perfectly toasted to BLACK in seconds. So don't leave the skillet!:)
GIFTABLE TREATS
Candied pecans make a wonderful gift! Everyone loves a homemade treat. EVERYONE. Grab some cute little mason jars and a spool of ribbon and you're good to go.
These pecans will stay fresh for at least a month, and don't have to be refrigerated, so they're perfectly giftable. And ship-able if you need to mail them!
And NOBODY will even KNOW they're not the regular sugar-loaded variety! A great way to convince family & friends that low-carb can still be freaking DELICIOUS 😀

Wow, Get Outta Dodge! These turned out really great! I have seen several recipes that take considerably longer than 5 minutes, so I had my doubts! But no doubts any longer!
Thanks for a great go to recipe that works as promised!!

I'm going to make these to toss into salads that need that 'lil sumpn sweet' - thank you! I love using monk fruit as a maple syrup sub in classic recipes. So versatile!
Emily

Can I use walnuts for this recipe? I have A LOT of them and don’t like them plain.
Thank you so much
Emily
Sure! Just watch them on the pan so they don’t burn:) Hope you enjoy

Just made these. What a perfect way to fully enjoy my home grown pecans. Thank you 🙂 I also added a large pinch of nutmeg as I love a bit of nutmeg for my evening snacks as it helps me sleep. I also used coconut sugar. Perfect, and I imagine quite versatile.... will be using this method for granola in the summer. Thanks again. 🙂
