    Mint Chocolate Cream Pie (Vegan & Paleo)

    This cream pie is the smoothest, most VELVETY pie evvvveer. Rich mint chocolate made from fruits and plants?  Yes, please! Mint Chocolate Cream Pie without the dairy!Min Chocolate Cream Pie

    You would never know this pie is made from AVOCADO. You can't taste it! But the texture....oh so creamy and smooth!

    Even if you don't LIKE avocado, you will like THIS. (ps I can't believe I used to hate avocado! What was I thinking??! If you're still a hater, there's hope for you yet. promise)

    And no dairy, gluten, eggs, grains or refined sugar. But lots of HEALTHY FATS! Yes, fat is good for you, in case you haven't heard. 🙂

    Luxuriously creamy and bursting with flavor! And you can totally customize the flavor by using different extracts. I LOVE mint with chocolate, but you can use vanilla, almond, coconut, coffee or whatever you like!

    Not only is it healthy, but it's super easy to whip up. All it takes is pressing the button on your food processor 😉 There's no baking, no cooking, just blend and chill. My favorite kind of recipe!

    Mint Chocolate Cream Pie {Vegan/Paleo}

    Unbelievably CREAMY & Velvety! You'd never know it's made from avocado!

    Total Time: 3 hours hours 20 minutes minutes

    Ingredients

    Crust:

    • 1 cup almonds
    • ¾ cup medjool dates
    • ¼ teaspoon vanilla
    • Dash of pink salt
    • Splash of water - if dry

    Filling:

    • 3 ripe avocados
    • ⅓ cup raw cacao powder - 4-6 Tbs, to taste
    • ¼ cup melted coconut oil
    • ¼ cup pure maple syrup - or honey, to taste
    • 1 Tbs vanilla extract
    • ½ teaspoon mint extract
    • pinch pink salt

    Instructions

    To make the crust:

    • Pulse ingredients in a food processor until sticky crumbles form (Careful not to over process).
    • Press into parchment-lined 7" springform pan.

    To make the filling:

    • Scoop out avocados into food processor and blend with maple syrup.
    • Add in remaining ingredients and blend well.
    • Taste & adjust. (more cacao, sweetener or mint, if you like)
    • Spread over crust & freeze 2 hours until solid, then transfer to fridge. Enjoy!!

          I'm printing the recipe to make it. It does looks easy enough to make and concidering I suck at baking I think I should be able to do it! (Ha!) Also, the crust looks good. What kind of crust did you use?
          P.s. Love the avocados in it! And I'm sure I won't be able to tell that it's all avocado! 🙂

            Haha it's so much easier than conventional baking! Just blend and chill. Pretty much foolproof.
            The crust is nuts & dates. Different than traditional pie crust but So yummy!

        Sorry about that! Updated the recipe. I like to use 1 Tbs, but you can start with 1 tsp and adjust to taste 🙂
