    Pecan Bliss

These little pecan bites! OMG. I can't wait for you to try them! Who needs cookies filled with gluten, dairy, sugar and junky chemicals and fillers when you can have a MUCH HEALTHIER treat with the same yummy flavor?!

With just 0.6 net carbs and almost 2 g of protein in each bite, you can enjoy these any time! With breakfast, for an afternoon snack or evening treat.

SO buttery, so much pecan FLAVOR + that delicious hint of sandy texture. YUM. I could eat these every day of my life, forever. #obsessed

Healthy No-bake Cookies with 5 Simple Ingredients

Goodbye gluten/grains/flour, SUGAR and additives. We're using 5 SIMPLE, basic, wholesome ingredients:

    1. Pecans
    2. Buttery Coconut Oil
    3. Monkfruit
    4. Coconut (for a bit of texture; there's no coconut flavor)
    5. Salt

I'm BLOWN away how these ingredients combined make SUCH an amazing flavor. My hubs & I both said, "WOW" when we tasted these.

I used Buttery Coconut Oil from Thrive Market that I found for just $4.99 (!!) Use my link in the notes to score an extra discount! Woohoo! This is the same buttery flavor oil that I used to make my Chewy Chocolate Chip Cookies! It's perfect for adding that AMAZING butter taste.Pecan Sandy Bites (Keto, Paleo, Vegan) PrettyPies.com

    Just Minutes to Make!

The key step in making the pecan flavor POP is to toast your pecans. Just put them in a dry skillet for about 5-7 minutes until your kitchen is filled with that wonderful aroma. LOVE IT.

Then throw everything in a food processor and blend it into a dough. That's it!

No baking, nothing complicated. Just scoop the dough into balls, smooth it out a little with your hands and pop it in the freezer to firm up for 5-10 minutes. SO EASY.

    Handle with Care

Note: handle these balls with care. They are a little fragile when you first scoop them.

Packing the dough together super tight when scooping, and compacting them with your hands helps them stay together.

Once chilled, they will hold together better. If you don't want 'em as fragile, simply bump up the amount of oil to 2 or 2.5 Tbs. That will make them firmer. It's up to you 🙂

Personally, I love them just the way they are.

    To Store

Keep refrigerated for about 10 days tightly wrapped in an airtight container. May be frozen for longer storage (thaw for a few minutes before eating)

      Love it!
Can I use regular sugar if not making as a paleo or Keto treat?
If just using regular coconut oil, do I need to add in any butter to replace with?

        Thanks! I love them too
Yes, powdered sugar works fine. Or regular granulated sugar if you want more “sandiness”

You can use butter extract with refined coconut oil / palm oil for flavor.

Or butter may work if you melt it first, but I’m not 100% sure it will harden enough. Maybe a combo is perfect!

If you try a sub, will you report back how it goes? 🙂

I'm confused about the measurements. The top of the recipe says 1 1/2 TBSP of lakanto monkfruit, but the instructions say 1/3 cup? Help?? 🙂

1/3 cup is just to make a batch of homemade powdered “sugar” in a blender 🙂 Measure 1 1/2 Tbs after blending .
Hope that helps. Let me know if you have any more questions.
