    Easy Strawberry Mousse (Vegan, Paleo)

    You only need 4 ingredients and 4 minutes to whip up this creamy strawberry mousse. (No dairy, eggs, corn starch or refined sugar!)

    How to Make Dairy-Free Mousse

    Need a quick creamy treat? I've gotcha covered. You may recall my Instant Lemon Mousse recipe. (Love it!) This is *almost* as instant, but just as easy. Both use canned coconut milk, vanilla, sweetener and fruit. NO dairy, eggs, corn starch, SUGAR, or artificial boxed stuff. 100% healthy whole-food ingredients! But there are some important things to remember:

    1. For best results, always use Thai Kitchen brand coconut milk. Others I've tried don't separate the cream from the water (which results in a FAILED recipe. Nobody wants that!)
    2. Don't forget the coconut milk MUST be chilled for at *least* 24 hours. So preparation is key 🙂 (I always keep 2-3 cans stocked in my fridge at ALL times - ya know, in case of a dessert emergency lol)

    But once you've got those 2 things covered, it's a breeze! Done in under 5 minutes MINUTES! How? Simply whip the cream and the other ingredients together. (I prefer my little hand mixer over my giant stand mixer.  Less clean-up for one! And it's a small batch, so you don't need the big guns) Strawberry Mousse (Vegan, Paleo) PrettyPies.com

    FREEZE-DRIED Delicious

    If you haven't tried freeze dried fruit yet, NOW IS THE TIME. It is so delicious! This is different from dehydrated fruit, which is more chewy. Freeze dried is very LIGHT and crisp. Sort of like a strawberry CHIP. And like other chips, these are definitely "I wanna eat the whole bag right NOW" good. (But don't. Cuz then you wouldn't be able to make this strawberry mousse! ha.)

    I get my freeze dried strawberries at Aldi (only $2.99) but you can also find them at Target, Sprouts, Whole Foods, Trader Joes and Amazon 🙂

    All you have to do is dump the whole bag of freeze dried strawberries into a small blender or food processor and blend them into a powder. It literally takes 10 seconds. Then dump the powder onto your coconut cream and whip it. Whip it good, ha. 😉Strawberry Mousse (Vegan, Paleo) PrettyPies.com

    Easy Strawberry Mousse (Vegan, Paleo)

    Rich and creamy dairy-free mousse that's bursting with strawberry flavor. You won't believe how simple it is to make!

    Ingredients

    • 2 13.6 oz cans coconut milk - solid cream only
    • 1 1.2 oz bag freeze dried strawberries
    • 1 Tbs maple syrup - or sweetener of choice
    • 1 teaspoon vanilla

    Instructions

    • (Use cans that have been refrigerated overnight.) Carefully scoop out the solid cream into a mixing bowl (save the leftover water for a smoothie!)
    • In a small blender or food processor, pulverize the freeze dried strawberries into a powder.
    • Add powder, maple syrup and vanilla to the mixing bowl with the cream. Whip with a hand mixer until combined, about 1 minute.
    • Chill for 30-60 minutes, if you like. Enjoy!

    Similar freeze dried strawberries on Amazon
    To store: Keep refrigerated for up to 10 days.

      I made a lot of your recipe, and they are fantastic. But I avoid the coconut stuff, contains a lot of fats and cover the taste of other ingredients. I make your mouse with the water from the chickpeas and always fresh fruits it tastes better and is lighter.

          Have you heard of aquafaba? That's chickpea liquid. If you buy "no added salt" chickpeas, it can even be whipped into vegan meringue 😉

        Check Target! They have lots at my store but otherwise I would make a simple strawberry compote/purée ( can make one out of frozen berries), let it cool and add it into the coconut cream with 1-2 Tbs of melted coconut oil as a stabilizer.

          For this recipe, can you give me the equivalent of freeze dried berries to frozen/fresh berries in cups please?

          Ideally I would like this to last me for a few days having a descent portion each time (that is if I eat it for breakfast only and not for dessert as well!)

        You could try maybe 2-3 Tbs strawberry purée, but if there’s stop much liquid with the cream, it will be strawberry soup, haha! Adding a powdered sweetener would help it thicken up though.
        But freeze dried strawberries are perfect because they double as a flavor and sweetener in one! And as natural food color, too

        I would double the recipe. This makes roughly 15-18 oz, depending on the amount of cream in your cans (which is usually around 8oz)

          I don’t like to freeze coconut cream mousse, but it may be ok. The texture can change some after freezing and thawing.
          But it should stay fresh in the fridge for several days.
