Perfect for St. Patrick's Day, Christmas or ANY time you're in the mood for some fluffy creamy mint chocolate deliciousness! Oh how I LOVE Grasshopper PIE.
For Paleo & Vegan, or Not!
My Dad's favorite dessert is Grasshopper Pie. (WHY is it called Grasshopper?? I don't know for sure, but I DO know there are no bugs in this pie, lol) I made this pie for him (well, myself too because I'm obsessed with mint choc, lol).
We're celebrating his birthday along with the others. He's not vegan/Paleo/gluten-free yada yada etc, but I bet he likes this healthier version at least as much as the original. Fingers crossed 🙂
Recipe Makeover!
Bring on the minty FLUFF! Cream filling that's so light, so unbelievably smooth. Paired with a chocolate crust! Omg. It's the perfect combination! Who doesn't love Grasshopper Pie?
I love it, but I had to do another recipe MAKEOVER to make it healthier by swapping out the conventional ingredients for natural ones! I love it!
Most recipes for grasshopper pie are made with tons of refined sugar, gluten, dairy/cream/sweetened condensed milk, marshmallows and/or eggs, artificial food coloring. And not only that, a lot are just crushed up oreos, and cool whip (aka a bowl of chemicals & cancer causing ingredients..) Junk that I don't want to put in my body.
This pie is a "Pretty Pie"-- made with REAL whole-food ingredients: walnuts, dates, cacao, cashews, mint extract, coconut oil, and a SECRET ingredient! Shhh 😉
For Vibrant Natural Color
Hello Green Goddess! You would never guess by tasting it that this pie is completely packed full of healthy ingredients! Including VEGETABLES. You can't taste 'em, but they're in there! lol!
100% natural - NO food coloring. It's food colored by FOOD 😀 No, shockingly, it's NOT avocado. This pie is totally hiding a giant cup of spinach!!! Hahahah don't tell your kids! They'll NEVER KNOW.
Secretly nutrient packed, fiber-rich, gorgeously vibrant green. You'll absolutely feel like a goddess knowing you're nourishing your body.
No dairy and gluten or processed foods that make you feel gross. No refined sugar to put you in a food coma. This pie is light and refreshing, not heavy.

Grasshopper Sans Alcohol
I originally planned to use creme de menthe in this recipe, but after doing some research on what exactly is IN it, I just couldn't bring myself to do it. I'm not against alcohol, but I am against refined sugar and artificial food coloring (which are ingredients in creme de menthe-- it's basically just simple syrup, alcohol steeped mint leaves plus green food coloring).
So I decided to use natural ingredients and mint extract instead. And the result is so delicious! You don't need the liqueur. (And now you don't have to make a special trip to the liquor store to make this pie. Yay!)

Hi! I really enjoyed this recipe. It inspired me to make it my own on my recipe blog! I shout-out your website on my recipe, please check it out when you get a sec!
Have a great day!
Emily
Your pie looks beautiful! Love that you used fresh mint leaves. I tried to leave a comment on your blog but I couldn’t figure out how.
Becky
What is Your blog address so we can all come see how You did this recipe? I have 3 kinds of mint growing in my yard so I would be interested in trying to add to or create my own blend for it also.
May You prosper in Your efforts! Thank You for letting us know.
Becky
I can't go to Meghann's blog & see how she did it as there is no info there...??
I'd also like to know why You don't recommend a low carb syrup replacement for the syrup, like RX?
I'm confused how coconut milk replaces maple syrup... or is it that the maple flavor isn't actually needed so using the milk & monk fruit is better??
Sorry my mind rushes around so much dear Emily. I LOVE Your site & Your recipes SOOOO much!! AMAZING!
I came searching today for a mint recipe & HERE YOU WERE!! I just got a bottle of Frontier mixed mint extract that has both spearmint & peppermint I want to use!! So I am making this TODAY!

Hi Becky,
This recipe was created in 2018 before I discovered monkfruit syrup. It may have not even been released back then! I updated the recipe notes to include sugar-free syrups as a replacement. Those can work great! I linked the monkfruit and allulose syrups that I love.
But coconut milk does make a good syrup replacement, too. I like to use pure stevia in cases when my guests can't have erythritol or when I run out of the other syrups.
So glad to hear you love the recipes!! Thank YOU so much! Let me know if you try this one. Hope you enjoy! 🙂
