If you miss oats on a low-carb/keto diet, you’re in LUCK. These cookies remind me so much of iced oatmeal cookies, but they’re Grain-Free/Gluten-Free/OAT-Free!

Each scrumptious cookie packs a whopping 5 grams of protein and only TWO grams net carbs— and that’s *without* having to resort to protein powder, which is often highly processed and has tons of additives and synthetic ingredients.

High in nutrients, fiber and protein, but in iced COOKIE form! Healthy protein cookies = cookies for breakfast! HECK YES.

N’OATMEAL = NO Oatmeal

Truth: A few years ago I used to LIVE on oatmeal. Overnight oats, oat muffins, oat COOKIES. I seriously love the flavor of oats. Slightly nutty with a hearty texture. Mmmm.

But they I discovered oats do NOT love me. I started having major stomach issues and finally discovered my precious most beloved oats were the culprit! I was so sad to give them up, but at the same time, I was desperate to feel better and thrilled to actually have one piece uncovered in my health puzzle.

And THEN I MADE THE DISCOVERY… shredded coconut tastes SO much like oatmeal in cookies! It’s TRUE! Especially when you add cinnamon.

Even better, these no BAKE. You literally stir together the ingredients and scoop them into cookies and FREEZE them. I adore them straight from the freezer.  YUM.Protein Cookies (Keto, Vegan, Paleo)


These cookies are made with nutrient-rich, high fiber, high protein plant-based ingredients so you can get some extra PLANTS into your diet (Plants hiding in cookies!) Cookies with health benefits. I LIKE IT.

  • Flaxseed is renowned for its high omega-3s which help make your heart healthy, and other elements which reduce cancer risk and aid digestion. Not to mention adding 12 g protein.
  • Almond Butter adds healthy fats while acting as the glue to hold the cookies together. Almond butter is loaded with antioxidants which fight aging and disease. And it packs in 24 grams of protein! 
  • Hemp Hearts are one of the highest sources of plant protein and I just found out they may help reduce PMS! Awesome! And since they’re so high in fiber, it results in ZERO net carbs! Woohoo!

You won’t BELIEVE this icing. *I* can’t believe this icing.

The flavor reminds me of caramel. Yep, it’s based on my Low-Carb Caramels recipe! I could drizzle this stuff on evvveerrrrrything! (And in fact I do.. like on this Caramel Brownie Cheesecake and these Caramel Pecan Cookies!)

And my favorite part: when you chill it, it hardens into a REAL-DEAL icing!

The ingredients? So simple! Just melt together:

This combination of ingredients creates the magic flavor. Yes, cashew butter! That’s the KEY ingredient. I know it’s higher in carbs than almond butter, but you’re only using two TSP so no need to worry about that. The creamy mildly sweet flavor is SO GOOD, So worth it!

Breakfast, Snack or Dessert??

Yep, I’m totally having these for breakfast.

I’m trying to get more protein in my breakfast, but I like to sneak it into muffins, pancakes, waffles and now breakfast cookies. I’m just not a savory breakfast person. And I have zero guilt about eating cookies for breakfast.

If I have 2 cookies, that’s 10 grams of protein and 4 carbs. And these are FILLING. The fat and fiber keep me full so I’m not wanting to graze the whole morning.

Deliciously healthy Iced “Oatmeal” Cookies — how will you enjoy them? I suggest one with a hot cup of coffee in the morning 🙂

N'Oatmeal Protein Cookies



To make the cookies:

  • Mix together all ingredients in a medium mixing bowl. Taste and adjust if needed with more stevia, salt or cinnamon. (If mixture is too wet, add a little extra flax until you get a cookie dough consistency.)
  • Use a cookie scoop to drop 10 dough balls on a large plate or baking sheet lined with parchment. Flatten with a flat measuring cup.
  • Freeze cookies until hardened (30-60 minutes).

To make the icing:

  • Stir together all ingredients in a small bowl. Melt gently if your oil is too firm.
  • Spread about 1/4 to 1/2 tsp icing onto each cookie.
  • When the icing starts to firm up, garnish with coconut shreds for "sprinkles." Chill cookies to harden icing completely.
  • ENJOY! 🙂

To store: Keep frozen in an airtight container for 1 month. Thaw on the counter for 1 minute. Must be kept chilled to hold shape.

    I want to make this but don’d have cashew butter. Can I sub with a different nut butter? Can I use coconut butter instead of oil for the icing?

      Yes you can 🙂 Almond butter will work, just a different flavor.
      Coconut butter works, too, but I would add some almond or coconut milk to thin it out.
