    Easy Cookie Dough Truffles {Paleo, Vegan, Keto}

    Edible, raw cookie dough bites made from 5 healthy ingredients-- and dipped in dark chocolate (No flour, butter, eggs or sugar!)

    Who doesn't love sneaking a big scoop of raw cookie dough from the mixing bowl?? Ah, the childhood memories. Well, now you can have the yummy dough on its own in a much healthier form! You're welcome 😉

    Goodbye, sugar! You're NOT the star of this cookie dough. You're not even on the ingredient list. Neither are any of the conventional cookie ingredients. So what in the world are they made of??...

    Cashews!! Yes, they've done it again. I'm constantly amazed by the wonders of this humble little nut. Mildly flavored, and slightly sweet on its own.

    How to Turn Cashews into Cookie Dough

    Simply stir in a little sweetener & coconut flour, and you have an EASY, delicious little treat full of FIBER. Yes, fiber. You can even add CHOCOLATE. For this batch, I added just a couple spoonfuls of chocolate shavings. But you can also use chocolate chips, or leave them out. Either way, I LOVE THEM. Easy Cookie Dough Truffles

    You can make these LOW CARB. Can I get a Hallelujah? lol.

    I tested this recipe with both STEVIA and MAPLE SYRUP and they're both equally amazing. So the choice is yours! With simple healthy ingredients (and sugar-free options) these decadent truffles can be enjoyed by many different diets-- vegan, paleo, keto, low-carb, dairy-free, gluten-free, egg-free, and grain-free.

    How to Make These NUT-Free

    You can also make these nut-free using sunflower butter! (although the flavor will be less cookie-flavored.

    So YOU get cookie dough, and YOU get cookie dough, and YOU GET COOKIE DOUGH. I'm having an Oprah moment here. I can't help it. They're just so dang good. You've gotta make some!

    Easy Cookie Dough Truffles {Paleo/Vegan/Keto}

    Ingredients

    US Customary - Metric
    • ⅔ cup cashew butter
    • ¼ cup coconut flour - (+ 1-2 Tbs more, if needed)
    • 2 Tbs pure maple syrup - (or 12 drops of Sweet Leaf Vanilla Creme Stevia)
    • 1 teaspoon vanilla
    • Pinch of Himalayan pink salt
    • 3 oz bar of dark chocolate - (see notes)
    • 2 teaspoon coconut oil

    Instructions

    • In a medium mixing bowl, stir together all ingredients (except the chocolate and coconut oil.)
    • If your dough is too wet, add in extra coconut flour. Optional: add in 2-3 Tbs chocolate shavings or chips.
    • Use a cookie scoop to make balls (½ Tbs to 1 ½ Tbs size) Roll with your hands to smooth them out.
    • In the microwave or a double boiler, melt 2 oz chocolate and coconut oil. (See notes for homemade chocolate)
    • Place each ball in the bowl melted chocolate and roll it around to coat.
    • Use a fork to lift each truffle onto a parchment-lined plate. Drizzle extra chocolate on top if you want it pretty.
    • Freeze for 20 minutes until firm. ENJOY!

    Ingredient Recommendations

    Raw Cashews from Costco.

    Note: I use homemade cashew butter made by blending 2 cups of raw cashews in a food processor until smooth, scraping down the sides as needed. You can also use store-bought (just check the labels for added sugar and such)

    Stevia Drops

    To Store:

    Keep refrigerated in an air-tight container. Should last 1-2 weeks in the fridge. Can also be frozen (but if you use maple syrup, they will need to thaw a little first)

    Make your own chocolate coating: 

    Simply mix together these ingredients in a small bowl:

    3 Tbs coconut oil, melted
    2 Tbs cacao powder
    1 Tbs cashew milk
    8 drops sweet leaf vanilla stevia drops OR 2 teaspoon maple syrup
    ½ teaspoon vanilla
    Dash of pink salt

        Either one. They also keep at room temp in an airtight container.

        But I do love to eat them straight from the freezer

      Hey! This recipe looks delish! First of all, I am going to make some truffles for Valentine’s Day for my mom, and I’m trying to figure out which ones I should make. We are dairy free, grain-free, and sugar-free, etc. Do you have a suggestion? Which ones are your fav?

      But most importantly, can I use almond butter instead of the cashew butter?

        Hi Lauren! These are definitely a fav!

        Yes, almond butter works, too. It’s just not as sweet, but you can sweeten to taste. (I would use monkfruit in these now. This recipe was created before I discovered Lakanto 🙂
