Real Life & Grasshoppers

This weekend, my house is going to be packed FULL of (almost) my entire extended family. My parents, siblings, nieces and nephews–17 of us crammed into my little living room. Sleeping bags, air mattresses from wall-to-wall. Making a huge mess (which makes my OCD self go a little cRaZy). But we’ll be having so much FUN, with the kids running wild, and everyone laughing til our faces hurt. The best.

We’re having one Giant birthday celebration on Saturday for about half my family whose birthdays are all close together. It’s become an annual tradition we have termed “the Birthday BLASH.”

But my house is not anywhere NEAR ready for guests to stay here. So as soon as I hit “Publish” on this post, I’m going to be frantically getting ready– wrapping gifts, scrubbing bathrooms, corralling and stashing the thousands of toys that have made their way into every crevice of every room (because #momlife).

I totally turn into that video going around on Facebook of the mom getting ready for company, LOL. Anyone else?

In Blash’s past, I’ve been stressed out about the mess, the details, the schedule, the “stuff”, but I want to be focused on the PEOPLE this year. That’s what really matters. I’m going to be intentional about nurturing relationships instead of worrying about things that ultimately don’t matter.

But I can’t skip the cleaning before. I just can’t. But during the party, I’m going to enjoy the party and not worry about the rest. I’m giving myself permission to relax. Family trumps mess. I’ll keep repeating that to myself 😉

So, my Dad’s favorite dessert is Grasshopper Pie. (WHY is it called Grasshopper?? I don’t know for sure, but I DO know there are no bugs in this pie, lol) I made this pie for him (well, myself too because I’m obsessed with mint choc, lol). We’re celebrating his birthday along with the others. He’s not vegan/Paleo/gluten-free yada yada etc, but I bet he likes this healthier version at least as much as the original. Recipe Makeover!

Bring on the minty FLUFF! Cream filling that’s so light, so unbelievably smooth. Paired with a chocolate crust! Omg. It’s the perfect combination! Who doesn’t love Grasshopper Pie?

I love it, but I had to do another recipe MAKEOVER to make it healthier by swapping out the conventional ingredients for natural ones! I love it!

Most recipes for grasshopper pie are made with tons of refined sugar, gluten, dairy/cream/sweetened condensed milk, marshmallows and/or eggs, artificial food coloring. And not only that, a lot are just crushed up oreos, and cool whip (aka a bowl of chemicals & cancer causing ingredients..) Junk that I don’t want to put in my body.

Grasshopper Sans Alcohol

I originally planned to use creme de menthe in this recipe, but after doing some research on what exactly is IN it, I just couldn’t bring myself to do it. I’m not against alcohol, but I am against refined sugar and artificial food coloring (which are ingredients in creme de menthe– it’s basically just simple syrup, alcohol steeped mint leaves plus green food coloring).

So I decided to use natural ingredients and mint extract instead. And the result is so delicious! You don’t need the liqueur. (And now you don’t have to make a special trip to the liquor store to make this pie. Yay!)

Ingredients
Brownie Crust
  • 1 1/2 cup walnuts
  • 7 medjool dates pitted, *see notes for sub
  • 1/3 cup cacao
  • 1 tsp vanilla
  • 1/8 tsp pink salt
Mint Cream Filling 
  • 2 cups raw cashews soaked
  • 1 tightly packed cup baby spinach
  • 1/2 cup maple syrup *see notes for sub
  • 2/3 cup coconut oil melted
  • 1 Tbs vanilla
  • 2 tsp mint extract
  • Pinch of pink salt
Prep Time 15 minutes
Cook Time 0 minutes
Passive Time 2 hours

Brownie Crust
  • 1 1/2 cup walnuts
  • 7 medjool dates pitted, *see notes for sub
  • 1/3 cup cacao
  • 1 tsp vanilla
  • 1/8 tsp pink salt
Mint Cream Filling 
  • 2 cups raw cashews soaked
  • 1 tightly packed cup baby spinach
  • 1/2 cup maple syrup *see notes for sub
  • 2/3 cup coconut oil melted
  • 1 Tbs vanilla
  • 2 tsp mint extract
  • Pinch of pink salt

Instructions
To make the crust:
  1. Pulse together all ingredients in a food processor until a sticky dough forms, adding a splash of water at the end to help blend if needed.
  2. Press crust evenly into a pie plate (lined with parchment for easier removal).
To make the filling:
  1. {Use cashews that have been soaked overnight in a bowl of water or soaked in hot water for 2 hours. Drain rinse and shake dry} Blend cashews and spinach in a food processor until completely broken down.
  2. Scrape down sides and add remaining ingredients and blend again.
  3. Taste and adjust for sweetness and minty-ness. 
  4. Pour over crust, spread smooth with a spatula. Cover and freeze until set (about 2 hours).
  5. Garnish with chocolate shavings or cacao nibs (optional). Enjoy!!

To store: Keep refrigerated for one week or frozen for one month. Keep tightly wrapped.

Sweetener Swap: To make this recipe low carb, replace the maple syrup with 1/2 cup coconut milk + a pinch of pure stevia powder, to taste. For the crust, replace the dates with 1/4 cup more nuts, 3-4 Tbs coconut oil + a pinch of pure stevia.
