Summa summa summatime!
I can't believe school's almost out. It's already almost 100 degrees (literally!) and I'm not sure how I'm going to get anything done with my kids home all day begging to go to the pool.
At least I have these cold fruity treats as a pick-me-up on a blazing hot summer day! I have the feeling I'll be making these on the regular.
You won't believe how EASY it is to make these bites of strawberry daiquiri deliciousness! They're SO flavorful and have a perfectly chewy texture, almost like candy.
Making them couldn't be simpler-- just STIR everything together. Scoop into balls. Roll and ENJOY! No cooking, no waiting, no soaking. The only equipment you need is a blender and a zester. Nothin' fancy!
What's in these?
Strawberries, of course! But not regular ones. The magic ingredient is FREEZE DRIED STRAWBERRIES! Just like I used in my Easy Strawberry Mousse, Strawberry Lime Cheesecake and Easy, Healthy Homemade Starburst (and more!) I *love* it!
You may be wondering.. "WHY use freeze dried strawberries?!"
- Did you know strawberries are made up of about 98% WATER?! And water in desserts is a big NO. You don't want watered down taste or a big soggy mess.
- This makes it SUPER simple and EASY to achieve lots of strawberry flavor without having to do any cooking/reducing of liquids/pureeing/etc. Who doesn't love a good shortcut?
Where do I get it?
You can find freeze dried fruit at most major grocery stores now (even some dollar stores!!) Target, Sprouts, Whole Foods, Trader Joes, etc.
But I always buy mine at ALDI (my fav place to get groceries!) You can get a bag of freeze dried strawberries for about $2.89! That's *much* cheaper than other stores. YAY.
Yep, there's ALCOHOL.
You can't make a REAL daiquiri without some RUM! It's time for an adults-only pretty pie. Sorry, kids. Now mommy's really not gonna share, haha.
{But instead of having TONS of added sugar like regular daiquiris, these bites are 100% naturally sweetened! Yay!}
I used dark rum, but you can use light if you'd like. Or if you prefer a different kind of liquor, go for it!
I think these would be so fun to serve at a bachelorette party or girls' night!! Don't you think? (Alongside some frozen daiquiris to drink!! YEAH)
If you'd rather keep these virgin, no problem! I think using extra lime juice would be JUST as delicious. You can even add some rum extract if you want to get that classic daiquiri flavor!
The CHEW
I LOVE the texture of these bites. Similar to my Low-Carb Lemon Bites, they're chewy and cake ball-esque, sweet and citrusy, and totally SCRUMPTIOUS!
One of my favorite parts? You can eat these STRAIGHT from the freezer! Thanks to the alcohol, they don't freeze solid! So cool (literally, ha).

Strawberry Daiquiri Balls (Vegan, Paleo, No Sugar Added)
Ingredients
- ½ cup natural almond butter
- 1 1.2 oz package freeze dried strawberries
- 2 Tbs rum - or more lime juice + rum extract
- 1-2 limes - 1 Tbs each juice & zest, + more if needed
- Pinch of pink salt
- (optional) powdered sweetener of choice - I added a dash of stevia powder
- 1 Tbs coconut flour - for rolling
Instructions
- Blend an entire bag of freeze dried strawberries into a powder using a small blender or food processor (takes about 20 seconds)
- Measure a scant ⅓ cup strawberry powder and add to a medium mixing bowl (reserving the leftover powder for rolling)
- Add remaining ingredients to the bowl and mix well.
- Taste and adjust if needed (more lime, salt, rum or sweetener) If dough is too wet, mix in a teaspoon of coconut flour at a time.
- Use a cookie scoop to make balls. Roll smooth with your hands. Freeze for about 15 minutes.
- Roll each ball lightly in coconut flour and then in strawberry powder. Sprinkle finely grated zest on top, if you like.
