Low Carb Chocolate Almond Butter Bark {Keto, Vegan, Paleo}

Gimme all the BARK
I’m a little bit OBSESSED with bark. So far I’ve made Peanut Butter and Cinnamon Praline flavors. Have you tried them? OMG. You’ve gotta have some will power not to eat the whole dang batch! lol
The PB Bark has actually been the #1 recipe on Pretty Pies ever since I published it. And for good reason. It’s DELISH.
Chocoholic?
If you know me, you know I really love chocolate. You, too?
Sometimes that craving strikes and I’ve gotta have chocolate everything: pancakes, smoothies, mini PIES , big pies, and now chocolate BARK.
It’s incredibly EASY to make. But incredibly HARD to stop at just one piece 😉
Oh, bark… how do I love thee
Let me count the ways. It’s because of your:
- Crunchy, munchy add-ins
- Incredible texture (that won’t break my teeth, haha)
- Healthy ingredients — no sugar, dairy, or soy here! Just the good stuff.
- Dose of good fats from coconut oil and almond butter. YAY!
- Flavor! Almond is SO GOOD.
I always add some almond extract to my homemade almond butter. Yum! If you’ve never tried it, it’s another MUST. Add almond extract to a smoothie with banana, spinach and almond butter, too. Super delish!
My favorite way to eat this is STRAIGHT FROM THE FREEZER. It doesn’t get rock hard like regular chocolate does. SO GOOD.

Low Carb Chocolate Almond Butter Bark {Keto, Vegan, Paleo}
Ingredients
- 1/2 cup almond butter - heaping
- 1/3 cup cacao powder - or cocoa powder
- 3 Tbs coconut milk
- 1/2 cup coconut oil - melted
- 1/2 - 3/4 tsp almond extract - optional
- 1/4 tsp pink salt
- pinch pure stevia powder (~1/16 tsp) - or 3 Tbs powdered monk fruit, to taste
- 1/3 - 1/2 cup almonds - chopped/sliced/slivered
Instructions
- Line a small baking sheet with parchment. *don't skip this or it sticks* Set aside.
- Mix all ingredients (except the chopped almonds) in a food processor, mixer, or whisk by hand.
- Taste and adjust to your preference (more stevia/cacao/salt/almond extract)
- Pulse or stir in your choice of almonds (slices, slivers, whole or chopped)
- Spread the chocolate on the parchment-lined baking sheet with a spatula.
- Sprinkle a few almonds on top, if you like.
- Freeze for about 30 minutes, until firm.
- Chop or break into pieces. Enjoy!

What can I substitute for coconut milk? Almond milk okay?

That might be ok. It may be a little bitter using almond milk (without the cream from the coconut milk)
