These Quick Gingerbread Cake Balls are incredibly easy & incredibly yummy. Full of warm, spicy gingerbread flavor without ANY flour, oil, or refined sugar. Just 3 minutes to make!
Gingerbread cookies are one of my favorite Christmas treats! I love the classic flavor! But I don't love all the refined sugar, gluten and dairy in traditional cookies.
Thankfully, I found a delicious way to get my ginger fix! And it couldn't be easier!
Thick, chewy, rich and full of gingerbread flavor in a healthy ball of "cake" deliciousness.
EASY & FAST
Do you have a mixing bowl? A spoon? Well then you're all set to make these cake balls!
You don't need a food processor. You don't need an oven or stove.
All you need are a few SIMPLE healthy ingredients. And all you do is stir them together.
It's shockingly CRAZY simple. Literally takes about 3 MINUTES, start to finish. YES!! Can you believe it?!
SO much easier than regular cake balls, which involve actually baking an entire cake just to get started!
Real Food, No Sugar
These little doughy balls are made with real food-- mostly almond butter! And zero refined sugar.
With less than 3 spoonfuls of sweetener in the whole batch, plus PROTEIN, healthy fats and fiber, these are a much healthier option than conventional sweets.
Almonds provide vitamins such as Vitamin E, magnesium, and manganese, and they're loaded with antioxidants. Healthy treats FTW.All the moms rejoice
Definitely a mom-approved treat for my kids. I don't mind them having cake balls like THIS.
Plus my kids love them-- even without all the sugar and other refined stuff! Mom win, for sure!
(Now, if someone would make my kids' school stop feeding them sugar all the time, that'd be greatttt.... but that's another story.)

Quick Gingerbread Cake Balls {Vegan, Paleo, No-Bake)
Ingredients
- Heaping ⅔ cup almond butter
- 2 Tbs maple syrup - or monkfruit maple syrup
- 1 ¾ teaspoon molasses
- ¾ teaspoon ginger
- ¾ teaspoon cinnamon
- ½ teaspoon vanilla
- Pinch pink salt
Instructions
- Stir together all ingredients in a mixing bowl.
- Scoop into balls using a 1 Tbs measuring spoon or small cookie scoop.
- Roll in your hands to smooth out.
- Optional: frost with coconut butter icing (see notes)
- Enjoy!
Notes
- ⅓ cup coconut butter, warmed
- 2 Tbs coconut milk, or milk of choice
- 2 ½ teaspoon maple syrup, to taste
- ½ teaspoon vanilla
- Dash of salt

I made them with store bought almond butter, and they are runny. I just now read that you made your own almond butter. 🙁

Add a little coconut flour! Just a tsp at a time until it's a smooth dough. They do firm up a little in the fridge, too.

Thanks Emily. I had already added some fine ground almond flour until I could form them in a ball. They are good, but I should have increased the spices a bit when I added the almond flour. Next time 🙂
