Gingerbread cookies are one of my favorite Christmas treats! I love the classic flavor! But I don’t love all the refined sugar, gluten and dairy in traditional cookies.

Thankfully, I found a delicious way to get my ginger fix! And it couldn’t be easier!

Thick, chewy, rich and full of gingerbread flavor in a healthy ball of “cake” deliciousness.

EASY & FAST

Do you have a mixing bowl? A spoon? Well then you’re all set to make these cake balls!

You don’t need a food processor. You don’t need an oven or stove.

All you need are a few SIMPLE healthy ingredients. And all you do is stir them together.

It’s shockingly CRAZY simple. Literally takes about 3 MINUTES, start to finish. YES!! Can you believe it?!

SO much easier than regular cake balls, which involve actually baking an entire cake just to get started!

Real Food, No Sugar

These little doughy balls are made with real food– mostly almond butter! And zero refined sugar. 

With less than 3 spoonfuls of sweetener in the whole batch, plus PROTEIN, healthy fats and fiber, these are a much healthier option than conventional sweets.

Definitely a mom-approved treat for my kids. I don’t mind them having cake balls like THIS.

Plus my kids love them– even without all the sugar and other refined stuff! Mom win, for sure!

(Now, if someone would make my kids’ school stop feeding them sugar all the time, that’d be greatttt….  but that’s another story.)

Ingredients

Instructions

  • Stir together all ingredients in a mixing bowl.
  • Scoop into balls using a 1 Tbs measuring spoon or small cookie scoop.
  • Roll in your hands to smooth out.
  • Optional: frost with coconut butter icing (see notes)
  • Enjoy!

Notes

Best served at room temperature, since the dough hardens when chilled.
What I used:
This food processor to make homemade almond butter (with dry roasted almonds from Aldi)
Pure maple syrup
To make the coconut butter icing, stir together:
  • 1/3 cup coconut butter, warmed
  • 2 Tbs coconut milk, or milk of choice
  • 2 1/2 tsp maple syrup, to taste
  • 1/2 tsp vanilla
  • Dash of salt
Storage:
Cake balls may be stored at room temp, in an air-tight container for about 1 week. If refrigerated, bring to room temp before serving. Can also be frozen for 1-2 months.
