    I absolutely love celebrating holidays. My mom is the BEST at making her home festive whether it's Valentine's Day or Thanksgiving or Halloween. It's so fun and bright every time we visit.

    I want my kids to have the same excitement about holidays that I got from my mom. Themed treats make holidays so fun! They spread joy. Make memories.  And these Frankenstein Pies are just the thing to make Halloween extra special this year.

    The crust is a chewy no-bake brownie (yum!) And the filling is a super rich and creamy vanilla-coconut cream. Plus a chocolate face!

    How to Make it GREEN - without DYES

    Tthe GREEN pie filling face is 100% naturally colored. No dyes and no food coloring needed. Nothing artificial!

    It's got a sneaky secret that makes me happy as a mom, haha! It's a VEGETABLE! These yummy little pies are packed with spinach to make that awesome green hue.

    And no one has to know! You cannot taste it-- really! It's just sweet and creamy and delish!

    You simply blend in a few handfuls of fresh baby spinach right into the filling and it creates a vibrant gorgeous color that makes it so great and festive!

    FRANK-ly, it's easy!

    This is such a simple recipe. For real. Blend and chill (my fav!). No baking involved.

    To make the crust:

    Basically, just place all the ingredients in a food processor and pulse them together until a sticky dough forms.

    No need to bake! Just divide the dough into parchment lined pans and chill until the filling is ready to be poured on top. The dates act as a binder to hold it together like magic.

    To make the filling:

    Same method! Use a food processor or high speed blender. It's as easy as the push of a button.

    Blend the cashews first, followed by sweetener, spinach, vanilla. Blend super smooth. Add the oil last.

    Coconut oil is the special ingredient to hold together the pies without eggs, gelatin or having to bake it, since it solidifies when chilled.

    Remember to taste and adjust as needed.

    Equipment I Used

    I used these mini cheesecake pans I found at TJ Maxx (love that place!) But you can also find some on Amazon. Aren't they cute?

    If you don't have the mini springform pans, you can use a muffin tin lined with parchment or silicone. See my notes for other options.

    I used my sturdy 7-cup food processor from Amazon to make the crust and the filling.

    To Draw the Freaky Face

    1. Grab some of your favorite chocolate - chips or a bar, either will work.
    2. Place the chips or chopped bar into a small microwave-safe bowl.
    3. Gently heat in 20-30 second intervals, just until it's almost melted.
    4. Stir smooth and immediately use a spoon to scoop some chocolate and drizzle / draw it onto your chilled pies.

    It doesn't have to be perfect - as you can see by my faces, ha!

    The key to Frankenstein's face is the big angular head and eyebrow.

    Frankenstein Pie {Vegan, Paleo, No-Bake}

    Ingredients

    US Customary - Metric

    Brownie Crust

    • 1 cup walnuts
    • 4 medjool dates
    • ¼ cup cacao
    • Splash of water
    • Splash of vanilla
    • Pinch of pink salt

    Green Cream Filling

    • ¾ cup raw cashews
    • 3 Tbs maple syrup
    • 3 big handfuls baby spinach ~4oz
    • ½ cup coconut oil - melted
    • ½ Tbs vanilla
    • Pinch of pink salt

    Frankenstein Face

    • 1 oz dark chocolate

    Instructions

    To make the Brownie Crust:

    • Pulse all ingredients together in a food processor until sticky dough forms. Add a splash of water if it's too dry.
    • Press into 3 mini 4" springform pans lined with parchment or one 7" pan. (see notes) Set aside.

    To make the Green Cream Filling:

    • Soak cashews in a bowl of water overnight. Or bring water to a boil and pour over cashews and soak for 1-2 hours. Drain, rinse and shake dry.
    • Blend cashews in a food processor for 3-5 minutes until smooth. Scrape down the sides.
    • Add remaining ingredients, streaming in the melted coconut oil last. Blend for 3-4 minutes until smooth. Taste and adjust for sweetness.
    • Pour over crust. Cover pans with a paper towel and foil. Freeze for 2 hours or until completely firm. Remove springform and transfer to fridge.

    To make the Frankenstein face:

    • Melt 1 oz of dark chocolate in the microwave ~30-60 seconds.
    • Transfer to a baggie and snip off the tip. Pipe on a face & enjoy! Happy Halloween!

    Notes

    This recipe makes 3 small pies (6 - 8 total servings.) Double the recipe to fill a standard pie plate or springform pan. Alternatively, you can use a silicone muffin pan or muffin tin lined with parchment.
    Keep refrigerated for about 1 week, or freeze tightly wrapped for one month.
